Full Job Description

The Executive Chef / Chef Partner will lead the culinary operation and work directly with ownership and the General Manager to establish Andrea’s culinary identity.

This is significantly more than a traditional kitchen-management position. The Chef Partner will have an opportunity to build the culinary team, systems, standards and culture from the beginning.

Key Responsibilities

Lead all culinary operations
Recruit, train and develop the opening culinary team
Establish exceptional food quality, consistency and presentation
Oversee execution of prime steaks and premium seafood
Develop and maintain recipes, specifications and portion controls
Manage food cost and kitchen labor
Oversee purchasing, receiving and inventory
Establish prep, production and line procedures
Control waste without compromising quality
Maintain exceptional sanitation and food-safety standards
Collaborate with ownership on menu development
Work closely with the General Manager on overall restaurant performance
Develop sous chefs and future culinary leaders
Build a disciplined, professional and positive kitchen culture

Ideal Candidate

5+ years of Executive Chef, Executive Sous Chef or Chef Partner leadership
Significant upscale steakhouse or fine-dining experience
Exceptional steak and seafood knowledge
High-volume restaurant experience
Strong understanding of food cost, labor and inventory management
Proven ability to recruit and develop culinary talent
Excellent leadership and communication skills
High attention to detail
New restaurant opening experience highly desirable

Compensation

Starting base salary: $100,000+

Final compensation will be based upon experience and track record.

The Chef Partner will also be eligible for performance bonuses tied to food cost, labor, restaurant profitability, food quality, guest satisfaction and team performance.

High-performing culinary leadership may also participate in long-term incentives and future growth opportunities with Andrea’s.

General Manager / Operating Partner: $90,000–$100,000 + bonus & incentives
Executive Chef / Chef Partner: $100,000+ + bonus & incentives
Executive Sous Chef: $85,000–$100,000 + bonus
Sous Chef: $70,000–$85,000 + bonus
