Job Description

Zerbo’s Market & Bistro is looking for a detail-oriented Pantry Chef (Garde Manger) to join our culinary team. In this role, you will be responsible for managing the cold station, preparing beautiful salads, cold appetizers, sandwiches, and charcuterie boards. Since our market prides itself on freshness, you will play an essential part in showcasing our high-quality ingredients through clean presentation and excellent flavor. [1, 2, 3, 4, 5]Benefits

Key Responsibilities

Cold Station Execution: Prep, assemble, and plate all cold menu items, including artisanal salads, sandwiches, cold appetizers, and specialty market platters. [1, 2, 3]
Artistic Presentation: Maintain a high standard of food styling and plate presentation for all Garde Manger items.
Component Prep: Make scratch-made dressings, vinaigrettes, cold sauces, spreads, and specialized toppings daily. [1]
Station Organization: Maintain a meticulously clean, organized, and sanitary cold station, ensuring strict adherence to health department rules. [1]
Inventory & Freshness: Monitor the shelf life of delicate greens and perishable ingredients; rotate stock using strict FIFO (First In, First Out) rules. [1]
Teamwork: Coordinate closely with hot-line cooks to ensure cold items and hot entrees hit the pass and go to the table together.

Experience & Qualifications

Minimum of 1 year of experience as a Pantry Chef, Garde Manger, or Prep Cook in a restaurant or full-service bistro kitchen.
Excellent knife skills and precise cutting techniques for vegetables, proteins, and cheeses.
Solid understanding of flavor profiles, food safety practices, and proper cold storage temperatures.
Ability to stand for prolonged periods (up to 8 hours), lift up to 40 pounds, and stay organized during high-volume rushes.
Strong attention to detail, cleanliness, and speed.
Flexibility to work a variable schedule, including mornings, evenings, weekends, and select holidays. [1, 2, 3, 4, 5]
