TITLE: Culinary Cook
REPORTS TO: Kitchen Operations Manager
PRIMARY FUNCTION
Under the general supervision of the Senior Sous Chef, the Culinary Cook is to assist with preparing delicious dishes in our kitchen. The Culinary Cook will complete routine kitchen tasks such as preparing workstations and ingredients so that our food matches the recipes. They will need to be able to follow instructions and all health and safety rules in our kitchen.
1. Offers support to the culinary team with general kitchen and culinary program duties and ensures the kitchen and food truck meet high-quality standards.
2. Responsible for preparing dishes that meet the expectations of management and customers alike.
3. Supports the team in meal planning and preparation, including checking food quality and overseeing cooking techniques.
4. Maintain knowledge of safety procedures, including safe temperatures at which ingredients must be kept and to which food must be prepared to avoid foodborne illness.
5. Interact with staff, club members, culinary team, administration, board members, and community members.
6. Works as part of a team, collaborating on complex dishes.
7. Maintain a calm demeanor in a high-stress, fast-paced environment.
8. Responsible for the comprehension and organization of following direct orders and recipes and correctly preparing dishes to the standards of the culinary team.
9. Maintain manual dexterity and hand-eye coordination to handle tools, such as knife techniques for chopping, slicing, cutting, and dicing.
10. Ability to stand in one place for hours, handle extreme heat, and work shifts.
11. Maintain knowledge of state and federal regulations regarding safe food handling.
12. Clean and sanitize the working surfaces, tools, utensils, and working area.
13. Maintain overall kitchen cleanliness by sweeping and mopping kitchen floors & walls.
14. Organizes, stocks, and dates newly delivered ingredients.
15. Performs preparation duties for the next day.
16. Drive company vehicles for daily food delivery and additional events as needed.
17. Supports the Culinary Administrative Assistant as needed with meal program documentation, including obtaining information for monthly claim reports, health inspections, audits, etc.
18. Performs other duties as assigned.
ADDITIONAL RESPONSIBILITIES
1. Participate in team meetings.
2. Participate in special programs and/or events as assigned.
3. Complete mandatory induction and training courses as and when required.
4. Participate in quality assurance systems.
5. Participate in team supervision and personal development review as assigned.
6. Follow the best practices for safety, both on the road and while loading or unloading the truck/trailer.
RELATIONSHIPS
Internal: Maintain close daily contact with the Culinary Department and Club staff to receive and provide information. Exhibit courtesy and understanding to staff and customers.
External: Maintain contact as needed with volunteers, partners, vendors, donors, and board members.
SKILLS/KNOWLEDGE REQUIRED
1. High School diploma or GED.
2. Must possess a valid driver’s license and a motor vehicle record that meets the standards of our driving policy.
3. ServSafe Food Handlers’ certification or the ability to obtain within 90 days of employment.
4. First Aid and CPR certification within 90 days of employment.
5. Interpersonal skills to deal courteously and effectively with members, staff, and the public.
6. Supervisory skills and aptitude.

Schedule:
Monday - Friday with the flexibility to work evenings and weekends as needed for events.
7:00 AM to 3:30 PM with occasional nights and weekends
Location:
Greater East Stuart Club with flexibility to travel to other Club locations and within the county, as needed.
