Overview

Join our dynamic culinary team as a Catering Chef De Cuisine, where your passion for exceptional food and leadership will elevate our catering services to new heights. This pivotal role combines creative menu planning, meticulous kitchen management, and team supervision to deliver memorable dining experiences for a diverse range of events. As a key player in our hospitality operation, you will oversee all aspects of food production, ensure strict adherence to food safety standards, and inspire your team to achieve culinary excellence. Responsibilities

Lead and supervise culinary teams in the preparation and presentation of high-quality catering menus, ensuring consistency and excellence in every dish
Oversee food production processes, including cooking, plating, and food handling, maintaining the highest standards of food safety and sanitizing procedures
Manage inventory control and procurement to ensure optimal stock levels while minimizing waste and controlling costs
Plan menus tailored to client specifications, dietary restrictions, and event themes, incorporating innovative culinary techniques
Coordinate shift management, assigning tasks effectively to meet service deadlines while fostering a collaborative team environment
Supervise banquet and catering operations from setup through service, ensuring smooth execution and exceptional guest satisfaction
Enforce strict compliance with health regulations and safety protocols across all kitchen activities
Monitor food service operations to optimize efficiency, quality control, and customer experience

Requirements

Proven experience in banquet catering, fine dining establishments, or restaurant management with a strong background in food production and kitchen operations
Demonstrated supervisory experience managing culinary teams in high-volume settings
Extensive knowledge of dietary requirements, food safety sanitizing procedures, and sanitation standards within the food industry
Skilled in menu planning, cost control, inventory management, and kitchen management systems
Hands-on experience with food handling, cooking techniques, and food service management
Strong leadership skills with the ability to motivate teams and manage shifts effectively
Excellent communication skills paired with a passion for hospitality and customer service excellence
Culinary certifications or relevant training preferred
Comfort with executing standardized recipes and menus provided by company, and or client with out deviations or opinions
Comfortable working in non traditional settings - Remote kitchens set up including but not limited to Parking Lots, Beach, Back Alleys, Warehouses, confined spaces and other non traditional settings as customary in the luxury catering segment
Familiar with Michelin level plating and execution
Familiarity with savory and baking and pastry is a plus but not necessary
Ability to follow instructions from leadership, ownership and client representatives
Ability to stand for long periods of time
Ability to lift at least 50 lbs unassisted, climb ladders, work in confined spaces
