Description:

About Timuquana Country Club Established in 1923, Timuquana Country Club has earned the distinction as one of Florida’s premier private country clubs. The Club's classic Donald
Ross course boasts 18 holes of tree-lined fairways, tight rolling approaches, and immaculate greens. The routing provides a variety of holes to challenge golfers of all levels.
Complimented by the natural scrub and a rolling panorama, the course is a testament to the heritage and tradition of Timuquana golf and the historic Clubhouse nestled on the St. Johns
River. The Club has hosted several USGA Championships including the 2002 Senior Amateur and the 2019 U.S. Women’s Amateur Four-Ball. The Club also hosts the Constellation Energy
Furyk & Friends Champions PGA TOUR Champions event each October. The 50,000 sq. ft. clubhouse and supporting amenities include a recently renovated resort-style, heated lap pool with beach entry, and casual, riverfront al fresco dining. Additional amenities include 8
Har-Tru Tennis Courts with recently improved LED lighting, floating dock, formal and casual dining, fitness center with spa services, and full-service locker rooms. The Club is working through a comprehensive Facility Master Plan and has completed $18.5mm in renovations to the campus in the last five years. Future work will include enhancements to the Golf
Shop, men’s and ladies locker rooms, and men’s grill. Plans also include the addition of a golf performance teaching center, fitness expansion, nature trail, and the creation of a new sports complex that will house a new tennis facility with additional courts, pickleball, F&B, and youth activities/summer camp space. Currently, the golf course is undergoing a major restoration with architect Bruce Hepner, with anticipated completion in August. Based on a strong capital dues program and initiation fees, the Club will be completing the facility master plan without assessments of the membership.

Position Overview:

The Sous Chef will aid in the oversight of all assigned areas of the Culinary Department.
Timuquana has 3 distinct full-service kitchens. The Grove is a fast-casual seasonal poolside restaurant that averages 225 covers a day; Pow-Wow is a full-service member-only restaurant averaging 250 covers a day and a banquet kitchen that supports events ranging from 10-500 people. Responsibilities will focus heavily on the daily execution of service but will include staff training, developing, and maintaining standards, executing functions, assisting the Executive Chef with various aspects of the planning process, and providing excellent food to the Club’s membership and guests. To be our successful Sous Chef, the perfect candidate must have extensive experience in a high-volume restaurant, be able to manage a large and diverse team, be a natural leader, and team player working in unison with all F&B leaders to deliver culinary experiences that exceed expectations.

Under the direction of the Executive Chef, develops and conducts staff training sessions, menu training, new hire orientation and training, continual training, and training manuals/materials.
Provides daily oversight of assigned culinary area, actively and effectively assists staff on the line with service. Appropriately speaks to team members/members/guests about the dining experience.
Effectively communicates staff areas of improvement to the Executive Chef.

Effectively coaches staff on culinary details when appropriate.

Investigates and resolves service issues. Effectively communicates guest feedback to Executive Chef/Food & Beverage Director.
Ensures the proper setup of the assigned culinary area, maintenance, and breakdown of the area.
Effectively communicates expectations and service goals to staff consistently.
Prepares prep sheets for all stations of an assigned area. Ensures all stations are prepped before service periods.
Complete knowledge of all food items being served including the preparation and presentation of those items.
Responsible for reporting any utility or maintenance requests to the Building

Superintendent.

QUALIFICATIONS

Proficiency with Microsoft Office. Candidates must have exemplary culinary skills as well as strong leadership skills, and a positive, upbeat, and friendly personality. Strong oral communication skills, professional demeanor, and grace. Individuals must possess strong organizational skills, be able to multi-task, work well as a team and be creative.

EDUCATION and/or EXPERIENCE

A minimum of 5 years (private club, high volume restaurant, or well-regarded hotel preferred) related experience and/or training; or equivalent combination of education and experience. Experience in grab and go, fast-casual, high volume a la carte, and banquet is needed.
