Full Job Description

Café Monarch is a nationally recognized fine-dining restaurant in Old Town Scottsdale, known for elevated cuisine, refined hospitality, and an uncompromising commitment to excellence.

We are seeking a skilled, composed, and service-driven PM Sous Chef to join our culinary team and help execute an exceptional dinner experience for every guest.

Position Summary

The PM Sous Chef reports directly to the Executive Chef and is primarily responsible for supporting the execution of dinner service.

This is a hands-on culinary position focused on station preparation, cooking, plating, timing, communication, and consistency throughout service. The PM Sous Chef will work closely with the Executive Chef and culinary team to ensure every dish is executed according to Café Monarch’s standards for flavor, quality, and presentation.

The right candidate is a highly capable line cook with strong culinary fundamentals, excellent station organization, and the ability to remain focused and precise during demanding service periods.

Responsibilities

Report directly to the Executive Chef and follow culinary direction throughout dinner service.
Set up and maintain a clean, organized, and fully prepared station.
Review mise en place and communicate any shortages or preparation needs before service.
Prepare and cook menu items according to established recipes and specifications.
Execute dishes with accuracy, consistency, and attention to timing.
Plate each course according to Café Monarch’s presentation standards.
Coordinate with other stations to maintain the pacing and flow of the tasting menu.
Communicate clearly and professionally with the Executive Chef and culinary team.
Taste and inspect ingredients and preparations to ensure quality.
Maintain proper portions and minimize unnecessary product waste.
Replenish mise en place and keep the station organized throughout service.
Follow all sanitation, food-safety, labeling, and storage procedures.
Assist with breakdown, cleaning, and proper storage at the conclusion of service.
Complete additional preparation and kitchen responsibilities as needed.
Contribute to a focused, respectful, and collaborative service environment.

Qualifications

Previous experience as a Sous Chef, Chef de Partie, Lead Line Cook, or similarly experienced culinary professional is preferred.
Fine-dining, tasting-menu, or high-level scratch-kitchen experience is strongly preferred.
Strong cooking fundamentals, palate, technical ability, and plating awareness.
Excellent station organization and attention to detail.
Ability to follow recipes and culinary specifications precisely.
Ability to work with speed, urgency, and composure during dinner service.
Strong communication skills and professional demeanor.
Reliable attendance, punctuality, and a strong work ethic.
Ability to stand for extended periods and lift up to 50 pounds.
Food-handler certification required or the ability to obtain certification.
