About Yugen

Yugen is a new Japanese sushi destination opening in Silverthorne — a nigiri-focused counter housed inside a one-of-a-kind venue. The 90-seat space pairs serious sushi with craft cocktails, racing simulators, and a gaming lounge. The food stands on its own. Our ambition is for guests to come for the energy and leave talking about the fish.

We are nigiri-focused by design — no rolls, no composed plates. The discipline is the point. Every piece has to earn its spot. We're hiring a Head Sushi Chef to own that program from day one.

The role

You'll run the 8-seat sushi counter as your domain. You're the chef behind the bar, the menu architect, and the standard-setter for everything that crosses the counter. The cocktail program is run by a separate Bar Manager — you own the sushi side end-to-end.

You'll be responsible for

Designing and executing the nigiri menu — selection, seasonal rotation, daily specials
Sourcing premium fish and ingredients; building direct relationships with suppliers and distributors
Developing and maintaining our rice program — the foundation of everything we serve
Working with ownership on pricing, cost controls, and menu changes
Maintaining cleanliness, prep workflow, and food safety standards
Being a visible presence at the counter — guests sit directly in front of you

What we're looking for

5+ years of sushi / Japanese cuisine experience, with meaningful time as a lead or sole chef
Mastery of nigiri fundamentals — rice, fish selection, butchery, single-bite composition
A point of view on shari (rice) — temperature, seasoning, texture — and the confidence to defend it
Strong supplier relationships or the network and skill to build them
A chef who takes ownership and runs their own program without hand-holding
Calm, professional presence behind the counter — you're part of the guest experience
Conversational English required

Bonus

Japanese language skills
Sake and shochu knowledge
Direct relationships with fish suppliers (Tsukiji/Toyosu, True World, Greenfish, ABS, etc.)
Personal interest in any of our venue's themes — automotive, professional racing (F1, IMSA, WEC, NASCAR), sim racing, video games, Pokémon, Magic: The Gathering, or tabletop gaming. Our regulars will share these interests and we want a chef who can talk shop.

Compensation & relocation

$65,000–$75,000 annual salary DOE
$10,000 relocation stipend paid after first 3 months
Salary review after first year based on performance and growth
