Full Job Description

The Dough Specialist plays a critical role in our restaurant by ensuring that every malasada is made to perfection. Since malasadas are at the heart of our menu, this position requires expertise, precision, and consistency. The Dough Specialist will oversee the entire dough-making process, ensuring quality, texture, and taste remain exceptional every time. In addition to production, this role involves leadership responsibilities, similar to a Shift Lead, within the dough preparation area.

Responsibilities:
● Prepare, mix, and proof dough to meet restaurant quality and consistency standards.
● Oversee the entire malasada-making process, from dough preparation to frying and
finishing.
● Maintain strict quality control to ensure every malasada meets our standards for texture,
flavor, and presentation.
● Train and guide team members on proper dough-handling techniques.
● Monitor and adjust cooking times for optimal results.
● Maintain a clean, organized, and efficient dough station at all times.
● Ensure compliance with health, safety, and sanitation guidelines.
● Work closely with management to optimize production and minimize waste.
● Assist with inventory management, ordering supplies, and maintaining equipment.
● Lead by example, fostering a positive and team-oriented work environment.

Qualifications:
● Previous experience in baking, dough preparation, or a similar food production role is
preferred.
● Strong attention to detail and consistency.
● Ability to work in a fast-paced environment while maintaining quality standards.
● Excellent time management and organizational skills.
● Leadership qualities with a team-oriented mindset.
● Willingness to learn and adapt to evolving recipes or techniques.
● Flexibility to work early mornings, nights, weekends, and holidays as needed.
