Kitchen Manager – Bread & Dough Production

Location: Great Harvest Bread Co. – Charlotte, NC

Position Summary

Great Harvest Bread Co. is seeking a highly motivated Kitchen Manager who is passionate about artisan bread making and leading a production team. This position is responsible for overseeing all daily bread and dough production using Great Harvest’s (S&D) baking methods while maintaining the highest standards of quality, food safety, consistency, and efficiency.

The Kitchen Manager serves as the production leader of the bakery, ensuring fresh products are available every day while supporting a positive team culture. In addition to managing bread production, this position oversees a smaller sweet production program that includes muffins, cookies, bars, scones, cinnamon rolls, and other seasonal baked goods.

Primary ResponsibilitiesBread & Dough Production (Primary Focus)

· Lead all daily bread production using Great Harvest Scratch & Dough (S&D) procedures.

· Mix, ferment, divide, shape, proof, and bake artisan breads according to established recipes and production schedules.

· Maintain consistency in dough development, hydration, fermentation, and finished product quality.

· Ensure proper use of fresh-milled whole wheat flour and specialty ingredients.

· Monitor dough temperatures, proofing times, fermentation schedules, and bake quality.

· Adjust production methods based on weather, humidity, flour characteristics, and seasonal conditions.

· Maintain daily production schedules to minimize waste while ensuring product availability.

· Train and coach bakers in proper S&D techniques and quality expectations.

· Ensure recipes are followed precisely while maintaining Great Harvest quality standards.

Sweet Production (Secondary Focus)

· Supervise production of cookies, muffins, scones, bars, cinnamon rolls, coffee cakes, and seasonal items.

· Coordinate sweet production with daily bread schedules.

· Maintain product consistency and presentation standards.

· Assist in developing seasonal and promotional bakery items.

· Ensure adequate inventory for retail demand.

Leadership Responsibilities

· Supervise kitchen staff and production team members.

· Create daily production schedules.

· Train new employees on bakery procedures and food safety.

· Conduct coaching and performance evaluations.

· Foster teamwork and maintain a positive kitchen culture.

· Promote accountability, organization, and continuous improvement.

· Cross-train employees for multiple production areas.

Inventory & Production Management

· Monitor ingredient inventory and order supplies as needed.

· Maintain proper inventory rotation (FIFO).

· Reduce production waste through forecasting and planning.

· Monitor food costs and labor efficiency.

· Maintain production records and batch documentation.

· Assist with weekly inventory counts.

· Coordinate with front-of-house staff regarding daily product availability.

Food Safety & Compliance

· Maintain compliance with all local, state, and federal food safety regulations.

· Ensure proper sanitation of equipment and work areas.

· Monitor refrigeration and freezer temperatures.

· Maintain HACCP and food safety documentation as required.

· Ensure employees follow safe food handling practices.

· Maintain a clean, organized, and efficient production environment.

Quality Assurance

· Maintain exceptional product quality and consistency.

· Conduct daily quality inspections.

· Ensure recipes and production standards are followed.

· Address quality concerns immediately.

· Maintain high presentation standards for all baked products.

Operational Responsibilities

· Open kitchen and prepare production for daily operations.

· Coordinate production with retail demand.

· Maintain bakery equipment and report maintenance needs.

· Assist with production planning for holidays and special events.

· Participate in continuous process improvement initiatives.

QualificationsRequired

· Minimum 3 years of commercial bakery experience.

· Minimum 2 years of supervisory or management experience.

· Experience with artisan bread production.

· Strong understanding of dough development and fermentation.

· Knowledge of food safety and sanitation practices.

· Ability to lead, motivate, and develop employees.

· Excellent organizational and time-management skills.

· Ability to work early morning shifts and holidays as needed.

· Ability to lift 50 pounds.

· Ability to stand for extended periods in a fast-paced environment.

Preferred

· Experience using scratch baking techniques.

· Experience with fresh-milled whole grains.

· ServSafe Food Protection Manager Certification.

· Inventory management experience.

· Production scheduling experience.
