Job Summary

Alter Brewing + Kitchen is looking for a passionate, hands-on Executive Sous Chef / Sous Chef to join our culinary leadership team. We are a craft brewery with a scratch kitchen focused on great food, great beer, and creating an experience our guests want to come back for.

In this role, you will play a key part in leading daily kitchen operations, developing and executing high-quality food, and building a strong culinary team. You will work closely with the Executive Chef and kitchen leadership to maintain consistency, control costs, reduce waste, and ensure every plate leaving the kitchen meets our standards.

This is a fast-paced, high-volume environment where leadership, teamwork, accountability, and hospitality are essential. The ideal candidate is someone who enjoys being in the kitchen, developing people, solving problems, and taking pride in both the food and the team behind it.

Responsibilities

Lead daily BOH operations and ensure smooth, organized kitchen execution during prep, service, and close.
Work closely with the Executive Chef to execute culinary direction, menu standards, recipes, and seasonal features.
Assist with menu development, recipe testing, Burger of the Month, beer-paired specials, and brewery-inspired food offerings.
Lead and develop cooks, prep cooks, dish staff, and other BOH team members through hands-on training, coaching, and accountability.
Set the tone for a positive, professional, team-oriented kitchen culture.
Manage kitchen shifts and ensure proper staffing, station coverage, communication, and execution.
Maintain consistent food quality, portioning, presentation, and ticket times.
Follow and enforce all food safety, sanitation, cleaning, and workplace safety standards.
Conduct line checks, prep checks, temperature checks, and daily kitchen inspections.
Assist with inventory, ordering, receiving, product rotation, and proper storage.
Monitor food cost, labor, waste, and portion control while helping the team operate within company goals.
Maintain proper prep levels and production plans based on sales, events, and business volume.
Identify opportunities to reduce waste, improve efficiency, and strengthen kitchen profitability.
Support brewery events, private events, catering, banquets, and high-volume service periods.
Collaborate with the FOH and brewery teams to create a seamless guest experience.
Help create and maintain a clean, organized, and professional kitchen environment.
Step into any position when needed and lead by example during busy services.
Communicate effectively with culinary leadership and provide feedback on staffing, product, equipment, and operational needs.

Requirements

3+ years of progressive culinary or kitchen leadership experience, preferably in a high-volume restaurant, brewery, gastropub, or scratch-kitchen environment.
Proven experience leading and developing BOH teams.
Strong understanding of high-volume food production and service.
Experience with menu execution, recipe standards, prep systems, and food quality.
Experience with inventory management, ordering, receiving, food cost, and waste control.
Strong knowledge of food safety, sanitation, proper food handling, and health department requirements.
Experience with catering, private events, banquets, or other high-volume functions is preferred.
Ability to read and understand P&L-related food and labor metrics.
Strong organizational skills and the ability to prioritize in a fast-paced environment.
Excellent communication and leadership skills.
Ability to coach, train, motivate, and hold team members accountable.
Must be willing to work nights, weekends, holidays, and high-volume event periods.
ServSafe certification or ability to obtain certification is preferred.
A genuine passion for food, hospitality, craft beer, and creating memorable guest experiences.
