Full Job Description

Position Summary

The Commissary Kitchen Manager oversees the daily operations of a central production kitchen, ensuring food quality, safety, efficiency, and consistency across all products. This role manages kitchen staff, inventory, production schedules, sanitation standards, and operational costs while supporting company growth and profitability.

Key ResponsibilitiesKitchen Operations

Oversee daily commissary kitchen production and food preparation.
Ensure all recipes, portions, and presentation standards are followed consistently.
Maintain efficient workflow and production schedules to meet store or client demands.
Monitor kitchen equipment and coordinate maintenance or repairs when needed.
Ensure timely preparation, packaging, and distribution of products.

Team Management

Hire, train, schedule, and supervise kitchen staff.
Create a positive, accountable, and high-performance work environment.
Conduct employee evaluations and provide coaching and development.
Enforce workplace safety and sanitation procedures.

Food Safety & Compliance

Ensure compliance with local health department regulations and food safety standards.
Maintain HACCP, sanitation logs, temperature logs, and cleaning schedules.
Lead health inspections and ensure corrective actions are completed promptly.
Ensure proper food storage, labeling, rotation, and handling procedures.

Inventory & Cost Control

Manage inventory levels, ordering, and vendor relationships.
Monitor food cost, labor cost, and waste reduction initiatives.
Conduct regular inventory counts and reconcile discrepancies.
Evaluate purchasing opportunities to improve margins and efficiency.

Quality Control

Ensure consistency in flavor, quality, and presentation across all products.
Perform regular quality checks on ingredients and finished products.
Work with leadership to improve recipes, processes, and operational systems.

Administrative Duties

Maintain production reports, labor reports, and operational records.
Assist with biweekly payroll reports
Coordinate with operations, retail locations, and suppliers to ensure smooth communication.

Qualifications

3–5+ years of kitchen management experience, preferably in a commissary, catering, or multi-unit food service environment.
Strong knowledge of food safety regulations and kitchen operations.
Experience managing teams and production scheduling.
Ability to work in a fast-paced environment and solve operational issues quickly.
Proficient in inventory management and cost control.
Food Manager Certification preferred (ServSafe or equivalent).
