Full Job Description

You spent years learning the craft. You don't want to spend another summer behind a stuffy sushi counter under fluorescent lights. We run a sushi station at Costa Fuego, the lakefront restaurant inside Velocity Island Park, and we want someone who can own it.

Our guests come off the wakeboard cable, off the aqua park, off the swim beach. Sun-tired, happy, and ready to eat. You feed them. Rolls, nigiri, sashimi. Real sushi, not an afterthought.

What you'll do

Run the sushi station during lunch and dinner service
Roll sushi to order, prep nigiri and sashimi
Break down and portion fresh fish
Help shape the rolls list based on what's coming in fresh
Mentor prep cooks who want to learn the line

What we need

Prior sushi or sashimi kitchen experience
Age 18 or older
Strong knife skills
Food handler card (we'll help you get one)
Weekend and summer evening availability
