Full Job Description

The Sea Dog Brewing Co. in Exeter, NH is seeking an Experienced Head Chef / Kitchen Manager. We should meet if you want to be a part of a established and dynamic team. This chef position is full time year round and will be focused in the kitchen. This opportunity will provide new chefs to our company with on the job training. We are an independent, Maine-owned company operating successful brewpubs in ME, NH, and FL. We pride ourselves on fresh food, hand crafted beers, exceptional hospitality, and legendary atmosphere! Our menu focuses on seafood and creative pub fare with new specials each week. You will benefit from individual training and there is ample room for you to share your culinary experience. You will help achieve our goal for exceeding guest expectations through kitchen management skills, staff communication and developing a culinary team. Head Chef / Kitchen Manager Responsibilities:

· Maintain a positive working attitude with the kitchen crew.

· Excel in areas of health safety, sanitation codes and industry standards.

· Work with the Sous-Chef / Team to maintain consistent foodservice standards.

· Develops/Maintains a team that executes the menu consistently through station preparation, appropriate forecasting and inventory management.

· Manages labor and food costs, inventory needs and administrative functions.

· Personnel matters include hiring, scheduling, coordinating staff training and ongoing employee evaluations.

· Culinary success including developing interesting weekly specials, seasonal menus, brunch items and functions.

Head Chef / Kitchen Manager Qualifications:

· Verifiable high volume kitchen management experience is required.

· Leadership and positive team attitude.

· Basic knowledge of Excel and Word programs.

· A willingness to both learn and teach in a mutually respectful work environment.
