Full Job Description

Job title: Director of Operations

Who we are:

Big-Dill Hospitality is a family-owned and operated restaurant group behind a diverse portfolio of casual, upscale, and fine-dining concepts. Our current restaurants include Muchacho Tex-Mex, Whistle Britches, Even Coast, Casa Brasa, Kamila, Maroma and TiO launching soon.

Our portfolio includes concepts helmed by Chef Omar Flores, a two-time James Beard Semi-Finalist for Best Chef Southwest and Dallas Rising Star Chef. These restaurants represent Chef Flores’ newest passion projects, several years in the making, blending culinary excellence with vibrant, high-volume hospitality.

As we continue to grow, we are seeking an experienced Director of Operations to lead, develop, and elevate our multi-concept portfolio.

Position Overview:

The Director of Operations is a senior leadership position responsible for overseeing daily operations across multiple restaurants spanning casual, upscale, and fine-dining formats. This role partners closely with ownership, culinary leadership, finance, and beverage leadership to drive operational excellence, profitability, and team development at scale.

This is a hands-on, people-first leader who thrives in high-volume environments, sets uncompromising standards, builds strong leadership benches, and understands how exceptional beverage and cocktail programs contribute to guest experience, profitability, and brand identity.

Key Responsibilities:

Operational Leadership

Oversee multi-unit operations with a focus on consistency, execution, and guest experience
Ensure brand standards are upheld across service, food quality, cleanliness, and hospitality
Identify operational gaps and implement scalable systems and best practices
Lead new restaurant openings and support upcoming concept launches
Oversee beverage operations across all concepts, ensuring consistency, profitability, and alignment with each brand's identity.
Partners with beverage leaders, chefs, and management teams to develop, execute, and maintain innovative cocktail and beverage programs.
Drive beverage quality standards, cocktail execution, inventory controls, and bar operational excellence.
Evaluate beverage trends, menu performance, and guest preferences to enhance the overall dining experience and increase beverage sales.

Financial Performance

Drive revenue growth, cost controls, and profitability across all locations
Manage labor, COGS, and controllables in high-volume environments
Analyze P&Ls and performance metrics; create and execute improvement plans
Partner with ownership and finance on budgets, forecasts, and strategic initiatives

Team Development & Culture

Recruit, coach, and mentor General Managers and senior leadership teams
Build leadership pipelines and succession plans across all concepts
Foster accountability, engagement, and a culture of excellence
Champion training, development, and performance management systems

Guest Experience

Elevate the guest journey across casual, upscale, and fine-dining experiences
Ensure hospitality standards align with brand identity and market expectations
Ensure bar service and cocktail presentation reflect the standards of each concept, delivering memorable guest experiences through exceptional beverage execution.
Lead by example in service recovery and guest relationship management

Cross-Functional Collaboration

Partner closely with Culinary leadership to ensure menu execution and FOH/BOH alignment
Collaborate with beverage leadership and bar managers to continually enhance beverage offerings and operational performance.
Work with HR on talent strategy, compliance, and team relations
Serve as a strategic advisor to ownership and executive leadershipWho You Are:
7+ years of senior multi-unit restaurant leadership experience
Experience across casual, upscale, and/or fine-dining concepts
Proven success in high-volume operations
Strong track record of developing and retaining high-performing leadership teams
Advanced financial acumen with P&L ownership
Strong knowledge of craft cocktails, premium spirits, wine, and beverage operations within upscale and fine-dining environments.
Experience leading or supporting beverage programs, including cocktail menu development, bar operations, beverage cost management, inventory controls, and staff training.
Ability to identify beverage trends and implement programs that drive guest satisfaction and increase beverage revenue.
Exceptional communication, organization, and leadership skills
Willingness to be present in the restaurants and lead from the floor
Experience supporting growth, scaling, and new concept openings preferred
