Purpose
The Assistant Bakery Manager supports the Bakery Manager in overseeing the daily operations of the Bakery Department. This position assists with product production, merchandising, inventory management, employee supervision, customer service, and food safety compliance. The Assistant Bakery Manager helps ensure the department achieves sales, profitability, quality, and service goals while maintaining an attractive, clean, and fully stocked bakery operation. This role assumes responsibility for department operations in the absence of the Bakery Manager.
Key Responsibilities Leadership & Team Development
- Assist in leading, coaching, and developing Bakery Department employees, including Bakers, Cake Decorators, and Bakery Clerks.
- Support hiring, onboarding, and training of new team members.
- Provide daily direction and feedback to department employees.
- Promote a culture of teamwork, accountability, food safety, and customer service excellence.
- Assist with scheduling and labor management to support business needs.
Department Operations
- Support daily Bakery Department operations to ensure efficient production and execution.
- Assist in coordinating baking, decorating, packaging, and merchandising activities.
- Ensure department cases, displays, and sales floor areas remain clean, stocked, and organized.
- Monitor product quality, freshness, and presentation standards.
- Serve as acting department leader in the absence of the Bakery Manager.
Customer Service
- Deliver exceptional customer service and support a customer-focused environment.
- Assist customers with product selections, custom cake orders, and special requests.
- Resolve customer concerns promptly and professionally.
- Ensure associates provide friendly, knowledgeable, and efficient service.
Production & Quality Control
- Assist in managing bakery production schedules to maintain adequate inventory and freshness.
- Ensure products are prepared and displayed according to company quality standards.
- Support execution of seasonal, promotional, and specialty bakery programs.
- Monitor product freshness and remove unsaleable merchandise.
- Maintain consistency in product quality and presentation.
Merchandising & Sales
- Assist in executing merchandising plans, promotional displays, and seasonal programs.
- Maintain attractive, fully stocked, and properly signed displays.
- Monitor product availability and support sales-driving initiatives.
- Identify opportunities to improve sales and customer engagement.
- Ensure bakery products are displayed according to company merchandising standards.
Inventory Management & Shrink Control
- Assist with ordering, receiving, inventory management, and replenishment activities.
- Monitor inventory levels and ensure adequate supply of ingredients and finished products.
- Ensure proper product rotation and freshness procedures are followed.
- Support shrink reduction efforts through effective inventory management and production planning.
- Participate in inventory counts and department audits.
Food Safety & Compliance
- Ensure compliance with all food safety, sanitation, and regulatory requirements.
- Maintain proper product labeling, temperature control, and storage procedures.
- Ensure equipment and work areas are clean, sanitized, and maintained.
- Promote workplace safety and immediately address safety concerns.
- Maintain compliance with company policies and operational standards.
Operational Performance
- Support achievement of department sales, labor, and profitability goals.
- Monitor productivity and daily workflow execution.
- Assist in implementing action plans to improve department performance.
- Communicate operational opportunities and concerns to department leadership.
- Support store-wide initiatives and business objectives.
