Position Title:Baker Lamination specialist
Team: Bake Team
Start Time - 7:30am-3:30pm
Supervisory Responsibility:N/A
Reports To:General Manager & Department Lead
Position Description:Produces laminated croissants, pastries, other bakery products. Works quickly in a small team environment with a reliable and positive outlook.
Responsibilities of Position:
- Contributes positively and respectfully in a small team work environment.
- Has a high-quality focus with efficiency in mind.
- Versatile and flexible with weekly product variations & volume changes.
- Capable of multitasking and excellent with time management. Can adjust their production schedule to meet deadlines of customer orders. Prioritizes tasks accordingly.
- Capable of increasing speed during high stress timeframes during wedding season & holidays to support the team with our ultimate goal of excellent customer experiences.
- Able to work independently and self-manage time.
- Accepts constructive feedback to meet standards. Eager to learn & grow with the company
- Understands and follows through on verbal and written directions.
- Strong communication skills. Has ability to ask for assistance when needed. Easily communicates with team members about production timelines.
- Contributes positively with ideas that would add value to the bakery.
- Actively works to control waste and product loss.
- Able to pivot and perform other tasks as assigned.
Additional Position Details:
- Maintains a clean working environment both with opening and closing duties.
- Actively conscientious of other team members by maintaining a balanced workflow of dish cleaning, sweeping, mopping, wiping down equipment, emptying garbage, and other tasks related to an operational kitchen with shared duties.
- Maintains inventory & stock counts of products and ingredients
- Focuses on Mise en Place, returns equipment to home locations for others use.
- Knows how operate large mixers, burners, sheeters, common knife skills, ability to move about the kitchen safely.
- Produces products within guidelines of food & safety standards.
- Scales, mixes, shapes and bakes bakery products. Maintains fermentation methods.
- Receives and unloads merchandise; checks quality, count and condition. Communicates any issues to management.
- Stocks, rotates and faces products with attention to product quality and expiration dates. Monitors inventories & ordering when tasked to do so.
- Participates in group communications in regards to new products, sales, and updates regarding the team and the business.
- Demonstrates familiarity with products in department, with ability to continue learning.
- Verbal with management in regards to events that may affect safety, productivity, security or any other situation that may have an adverse effect on the bakery.
MUST HAVE:Food Handler’s card
Qualifications
- Experience of artisan baking techniques and industry standard equipment required.
- Basic math and computation skills required.
- Skills to work independently, effectively manage own time and multi-task in a fast-paced environment.
- Skills to adapt to the shifting priorities and needs of a bakery environment.
- Skills to communicate when under pressure required.
- Self-motivated, with high attention to detail, quality and presentation.
- Skills to collaborate and communicate effectively and professionally in a team environment and one on one with coworkers, supervisors, and owners.
- Skills to read, understand and follow through on verbal and written instructions.
- Ability to maintain a flexible schedule in order to meet needs of the department.
- Ability to reliably meet required work schedule and adhere to company attendance policy.
Physicality
- Ability to stand on feet for entirety of shift with swift movements through kitchen with production duties.
- Continuously required to: use arms, hands and wrists; grasping/squeezing
- Frequently required to: lift and carry 1-20 pounds
- Occasionally required to: lift and carry 21-50 pounds
- Occasional step stool use required.
Our Space
- Our production environment has a lot of movement, some tight quarters and areas that can be wet, slippery, louder, and temperature extremes in controlled environments in the cooler, freezer, and bakery.
- Exposure to dust, gluten, nuts, seeds, dairy, eggs, occasional raw meats, and other items with seasonal menu updates

- THIS POSTION REQUIRES EXPERIENCE WITH LAMINATION PROCESSES (ie: use of a sheeter, a clear understanding of correct butter & dough temps, shaping of various Danish & pastries, high volumes of product per day, etc.) WHAT LEVEL IS YOUR CONFIDENCE WITH THIS TASK?
A) LOW- I have never used a sheeter or laminated before
B) MEDIUM- I learned the process in culinary school but have yet to do it professionally
C) HIGH- I have 6 months of more of experience working with a sheeter & laminating professionally
