Job Summary

We are seeking a passionate and skilled Sushi Chef to join our dynamic culinary team. In this role, you will craft authentic and visually stunning sushi dishes, ensuring each creation meets the highest standards of quality, freshness, and presentation. Your expertise in Japanese cuisine, food safety, and kitchen operations will contribute to delivering an exceptional dining experience for our guests. This position offers an exciting opportunity to showcase your culinary artistry in a fast-paced, high-volume environment dedicated to fine dining excellence.

Responsibilities

Prepare a variety of sushi including nigiri, sashimi, maki rolls, and specialty dishes with precision and artistry
Maintain strict adherence to food safety and sanitizing procedures to ensure a clean and safe kitchen environment
Operate kitchen equipment such as sushi knives, rice cookers, refrigeration units, and other culinary tools efficiently and safely
Assist in menu planning by developing innovative sushi offerings that align with culinary standards and customer preferences
Manage food production processes ensuring consistency in taste, presentation, and portion sizes across all dishes
Collaborate with the culinary team to uphold recipe adherence and quality control during high-volume food service periods
Participate in food handling, braising, poaching, grilling, and other cooking techniques as needed for diverse menu items
Support dietary department requirements by preparing specialized sushi options for dietary restrictions or health considerations
Maintain cleanliness through proper food safety sanitizing procedures and ensure all kitchen areas meet sanitation standards

Experience

Previous experience as a sushi chef or in a similar Japanese cuisine role within a fine dining or high-volume restaurant setting
Strong knife skills with proficiency in precise slicing techniques essential for sushi preparation
Demonstrated knowledge of food safety management practices and sanitation protocols in a professional kitchen environment
Experience with menu planning, recipe development, and food production processes
Familiarity with operating commercial kitchen equipment safely and efficiently
Background in food handling, catering experience, or dietary aide experience is advantageous
Proven ability to work under pressure while maintaining attention to detail and quality standards
