General Manager — Bruster's Real Ice Cream

Conroe, TX · Full-time · $50,000/year

About the role

Run a Bruster's store from open to close. You're accountable for the team, the guest experience, and the P&L. Not just keeping the lights on, but creating the kind of consistent, memorable visits that turn first-time customers into regulars who recommend us to their friends.

This is hands-on, high-visibility work. You'll be on the floor during the rush, behind the counter when the line builds, and in the back office when the numbers need to add up. BrustersTX is a growing Houston-metro franchise group strong performers move into multi-unit and district leadership.

What you'll own

The team. Recruit, hire, onboard, train, schedule, and coach a crew of 15–25 hourly team members and shift leads. Address performance issues directly and develop your bench.
The guest experience. Set the standard for hospitality, consistency, and speed. Handle complaints in a way that earns repeat visits — not just resolves the moment.
The P&L. Hit weekly targets for sales, food cost, labor cost, and waste. Read your numbers daily and act on them.
The store. Open/close standards, cleanliness, equipment uptime, food safety, and inventory accuracy.
Production. Plan and execute daily ice cream batching, cake production, and prep against demand forecasts.
Catering & community. Coordinate catering events, support local schools and fundraisers, and represent the brand inside and outside the store.
Brand execution. Roll out LTOs, promotions, and the operating playbook from corporate and BrustersTX.

What we're looking for

3+ years directly managing a restaurant, QSR, or retail location
Direct P&L accountability — you've owned food cost, labor cost, and sales
ServSafe Food Manager certification, or willing to obtain within 30 days of hire
Comfortable working nights, weekends, and the May–August peak
Proven experience hiring, coaching, and terminating when needed
Comfortable with POS, scheduling tools, and basic technology
Reliable transportation to the store
A genuine love for hospitality

Physical requirements

Stand 8+ hours per shift
Lift up to 50 lbs
Work in a fast-paced environment with mixed warm and cold conditions
Frequent reaching, bending, and walking
