Full Job Description

Purpose / Objective

The Banquet Cook’s overall objective is to produce and oversee the highest-quality banquet and catering menus for Haywood Park Hotel (Fitz and the Wolfe & Battery Park Hall) and Cambria Hotel (Hemingway’s Cuba). This leader ensures every group function and event delivers a pleasurable and memorable guest experience by blending the foundations of traditional banquet cuisine with elements that highlight each venue’s brand and identity.

Areas of Responsibility

Oversee the day-to-day culinary operations for all banquet and catering events across multiple venues.
Develop and execute traditional banquet menus with branded touches unique to each property:
Fitz and the Wolfe – Elevated, timeless classics.
Battery Park Hall – Flexible, large-scale banquet service.
Hemingway’s Cuba – Tropical and Cuban-inspired flavors.

· Ensure inventory is stocked and communicate needs to leadership.

· Oversee pre-event readiness and timely execution of all menu items.

· Direct banquet teams, scheduling staff and workflow across properties.

· Maintain food safety, sanitation, and organization in all banquet kitchens.

· Assist other culinary operations when banquet demand is low.

· Model positive communication, discretion, and company values.

· Adapt quickly and solve problems professionally under pressure.

· Stay current on emails, progress updates, and reports.

Knowledge, Skills, and Abilities (KSAs)

Strong foundation in banquet-style culinary execution, with creativity to highlight venue-specific branding.
Must possess solid computer skills, including Microsoft Word, Excel, and Outlook.
Ability to influence and inspire teams to deliver successful outcomes.
Excellent communication skills, both verbal and written.
Strong organizational and time-management skills with the ability to manage multiple properties and events simultaneously.

Minimum Qualifications

High School diploma required; culinary degree preferred.
At least 2 years in a banquet or catering-focused role.
Food Safety Certification preferred (or attained within 30 days).
Experience managing teams across multiple venues a plus.

Work Environment / Conditions

Must be comfortable working in shared kitchen spaces with constant activity and noise.
Ability to adapt to frequent changes in priorities, event timelines, and deadlines while maintaining professionalism and collaboration.
Work schedules will vary weekly based on event demands and may exceed 40 hours, including evenings, weekends, and holidays.
Must be able to work safely in kitchen environments with high temperatures and humidity.
Physical requirements: ability to lift up to 50 lbs., stand for extended periods, and travel between Haywood Park and Cambria Hotels as required.
