Full Job Description

Job Summary:
We are seeking a skilled mature seasoned Saute Chef to join our culinary team. The ideal candidate will assist the Head Chef in overseeing kitchen operations, food preparation, and staff management. 5 plus years in fine dining/upscale restaurants or clubs. Grill master.

Duties:
- Collaborate with the Head Chef to execute each nights needs and lead the line while working the grill station grill in a medium volume steak and seafood upscale kitchen.
- Supervise food preparation and cooking activities of all hot and cold line chefs
- Ensure compliance with food safety and sanitation standards
- Manage inventory levels and help control food costs
- Train and mentor kitchen staff on proper cooking techniques and regulations
- Be creative, consistent and open to criticism to grow and be a better chef
- Oversee kitchen operations in the absence of the Head Chef

Experience:
- Proven 5+ years upscale line chef, organized, passionate with great multitasking abilities
- Strong knowledge of food handling and safety procedures compliance to BOH
- Leads by example at all times mentoring those around them and holding cooks accountable for actions and making sure the food is fresh and prepared correctly
- Maintains clean and organized workstations on the line and fresh product is maintained
- Is respected because they lead by example and a great communicator each day

Skills:
- Creates comradery and a team that works hard together for same goal.. consistent food
-Organized food preparation gameplan daily spends time training cooks and dishwashers
- line chef management and follows Chefs direction to execute great food daily
- versed in new trends and brings ideas to the table through collaboration
- Food management expert makes sure all products are labeled and dated on all stations as well as the walk in and freezer areas
- Food handlers certificate required or ability to get one within 30 days of starting
- Keen eye for cleanliness and proficient in proper sanitations standards each day
- great knife skills and quick to make prep lists finished by standards set forth by Chef
- operates all kitchen equipment well and maintains cleanliness/order in the kitchen
- Kitchen management experience
