Full Job Description

Job Overview

The Kitchen Manager is responsible for the overall operation of the Campus PreSchool food program including food preparation, menu planning, record keeping, cleaning and sanitation. This is done in accordance with the federal USDA Child and Adult Food Care Program (CACFP) and Department of Health standards. The Kitchen Manager will also order and organize incoming food orders, collaborate with the Assistant Director for smooth kitchen operation, manage and assign duties to the Kitchen Assistant, and maintain a clean and orderly kitchen.

Key Responsibilities:

Prepare and serve meals in accordance with USDA guidelines
Maintain accurate daily food production records
Coordinate and prepare menus with the Assistant Director
Inventory and order food and supplies in cooperation with the Assistant Director
Maintain a sanitary kitchen in accordance with Department of Health standards
Wash and put away tableware, pots and pans and utensils
Assists in preparation and distribution of tableware and food to and from classrooms
Conduct periodic inspections of kitchen tools and equipment including but not limited to all food storage equipment on site in cooperation with the Assistant Director

REQUIRED MINIMUM QUALIFICATIONS:

A.) Graduation from a regionally accredited or New York State registered college or university with an Associates degree in Food Service Management, Nutrition or closely related field and two years’ experience in the preparation of food on a large scale; or

B.) Four years’ experience in large scale food preparation; or

C.) An equivalent combination of training and experience as indicated within the limits of A) and B) above

NOTE: Large scale cooking is the preparation of a variety of meals requiring varying preparation techniques for service of groups of more than 50 people.
