Fry Cook

What this role is

The Fry Cook owns the fry station during service — responsible for executing every fried item on the menu accurately, consistently, and on the same ticket timeline as every other station on the line. This is a hot, fast, physical job in a scratch kitchen that runs high cover counts on peak days. The person in this role shows up ready to work, communicates well with other adjacent stations, and takes the quality of their output personally.

Schedule and physical reality

Schedule: We operate on Tuesdays through Sundays, Closed Mondays. Shifts range in length from 5.5 hours to 10 hours. Weekly schedules may vary.

Physical demands: Standing for the full shift on a hard floor. Sustained exposure to high heat from the fryer and surrounding line equipment. Frequent lifting of supply cases and oil containers up to 50 lbs. Repeated bending, reaching, and quick pivoting during service. Burns and cuts are occupational realities; proper technique and protective equipment reduce risk. This is not a role where “I can’t take the heat” is a figure of speech.

Environment: A working commercial kitchen. Loud and busy during service. Hot year-round; hotter in summer. Shared space with tight clearances during peak service.

What you do

During prep (before service): - Set up the fry station: check oil temperature, inspect oil quality, prep and portion battered or breaded items as directed - Stock all fry baskets, sheet pans, holding trays, and necessary tools - Review the specials and any modifications for the day - Confirm station is stocked and clean before service begins

During service: - Execute all fried menu items to recipe spec and plating standard: halibut fish & chips, french fries, onion rings, fried chicken, fried shrimp, appetizers, etc. - Manage multiple tickets simultaneously; maintain quality and timing on every drop - Communicate with adjacent stations when items are running together - Monitor oil temperature and quality throughout service; notify Kitchen Manager if oil needs changing during a shift - Maintain station cleanliness throughout service — a clean station runs faster and safer

Post-service / closing: - Filter or change fryer oil per the schedule - Drain, clean, and re-season equipment per closing checklist - Break down station, wrap and label remaining product, date and store correctly - Assist kitchen team with closing clean up — Complete closing checklist.

What good looks like

Every fried item leaves the station at the right temperature, right color, right portion, right time. The station is never the reason a ticket is late. Oil is monitored and maintained without being told. The station is cleaned during and after service as a habit, not a task to be reminded about. Communication with expo is proactive — if something is running behind, expo knows before they ask.

Qualifications

Required: - Ability to work in a hot, fast-paced environment for the duration of a full shift - Basic knife skills and comfort handling raw food product - Punctuality and reliability — this station does not run without coverage - Food handler certification obtained within 14 days from onboarding.

Preferred: - Prior experience on a fry station or commercial kitchen line - Familiarity with scratch-kitchen prep and portioning standards

Not required: Formal culinary training. We will train the right person.

Compensation

Starting Hourly Rate: $16 - $22 / hour D.O.E, with a 90 Day Review. Annual merit increases available based on performance.

Pay: $16.00 - $22.00 per hour
