Full Job Description

Premier, Milwaukee restaurant is looking for a talented culinary professional to add to the team in the role of Executive Sous Chef. Come join our team in creating unforgettable dining experiences and continuing the award-winning reputation. Working directly with the Executive Chef, the Sous Chef will play a pivotal role in every aspect of the dining experience: menu crafting, product sourcing, associate development, and special events.

JOB DUTIES & DESCRIPTION

DAILY PREP & SERVICE PERIODS

Assist Executive Chef in ensuring that operational basics and culinary standards are achieved with commitment and passion
Work side by side with Executive Chef and culinary team in daily service to deliver the absolute best culinary experience for guests
Assist Executive Chef in food production and butchery to maximize productivity and minimize waste
Experience and/or expertise with infrared broiler HIGHLY PREFERRED. Steak temperature accuracy and perfection is expected for this position.

VENDOR RELATIONS & PRODUCT

Assist Executive Chef in regular product ordering, prep lists, and product consistency
Assist Executive Chef in monthly inventory process
Ensure all product being purchased and stored is safe, delicious, and consistent to standards

TEAM LEADERSHIP

Assist Executive Chef in the training and development of the culinary team, offering guidance and direction as needed
Assist Executive Chef in the supervision of culinary team for production, safety, and adherence to company recipes, rules, policies, and federal/state/local laws
Manage and leads culinary team in the absence of the Executive Chef
Work in tandem with management team to create the ultimate dining experience

SAFETY & SANITATION

Assist Executive Chef in the enforcement of all safety and sanitary practices
Assist Executive Chef and culinary team in the cleanliness and maintenance of the kitchen and equipment
Assist Executive Chef in ensuring all health inspections meet state and local standards

CULINARY PROGRAM & MENU DEVELOPMENT

Work with Executive Chef in the development, sourcing, and execution of culinary items, special features, and future menu changes
Assist the Executive Chef in the costing of menu items and product
Excellent understanding and proficiency of various cooking methods, ingredients, equipment, and procedures
Foster a creative environment for culinary excellence, innovation, and team development
Assist the Executive Chef in planning and execution for varied off-site culinary events and catering

PREFERRED QUALIFICATIONS

5 years professional culinary experience

2 years’ experience in a polished or fine dining operation

1-year experience in culinary or kitchen management role

ServeSafe Training and/or Certificate

Culinary Education is a plus, but not required

POSTION TECHNICALS

Must be flexible in scheduling

Weekends- Friday and Saturday are required

Restaurant is open each week Tuesday - Saturday; Closed on Sundays and Mondays

Job Type: Full-time

Pay: $60,000.00 - $70,000.00 per year
