CHEF DE CUISINE

San Sabino | West Village, New York City

San Sabino is seeking an exceptional Chef de Cuisine to join our leadership team.

This is a rare opportunity for an accomplished culinary professional to help lead one of New York City's most celebrated restaurants. We are seeking a passionate, driven, and highly organized leader with a proven background in chef-driven restaurants, strong operational abilities, and a commitment to developing people and maintaining the highest culinary standards.

The ideal candidate possesses both the creative sensibility and operational discipline required to lead a high-performing kitchen. They understand that great restaurants are built through consistency, mentorship, attention to detail, and an uncompromising commitment to hospitality.

About the Role

As Chef de Cuisine, you will work directly alongside the Executive Chef to oversee all aspects of kitchen operations, including culinary execution, staff development, inventory management, financial performance, sanitation standards, and service leadership.

You will play a critical role in preserving and evolving the culture of excellence that has made San Sabino one of New York's most sought-after restaurants.

What We're Looking For Required Experience

Previous Chef de Cuisine or Executive Sous Chef experience
Significant experience working in chef-driven restaurants
Proven success leading high-volume, quality-focused kitchens
Strong understanding of food costing, labor management, inventory control, and purchasing
Exceptional leadership, coaching, and communication skills
Demonstrated ability to build, mentor, and retain high-performing teams
NYC Food Protection Certificate preferred
Open availability including evenings, weekends, and holidays

Responsibilities Culinary Excellence

Ensure all food meets the highest standards of quality, consistency, presentation, and execution
Partner with the Executive Chef on menu development, recipe refinement, and culinary innovation
Maintain recipe integrity, production standards, and quality control systems
Continually evaluate and improve kitchen systems and food production

Team Leadership & Development

Recruit, hire, train, schedule, and develop kitchen employees
Foster a culture of professionalism, accountability, teamwork, and growth
Conduct performance evaluations and ongoing coaching
Mentor cooks and sous chefs through active apprenticeship and development

Operations & Financial Management

Manage labor costs, food costs, purchasing, and inventory
Monitor and improve kitchen efficiency while maintaining quality standards
Collaborate on budgeting, forecasting, and operational planning
Implement waste reduction and cost-control initiatives

Service Leadership

Lead and expedite service
Maintain clear communication between FOH and BOH teams
Ensure exceptional guest experiences through flawless execution
Resolve operational challenges quickly and effectively

Sanitation & Compliance

Maintain the highest standards of cleanliness and organization
Ensure compliance with DOH regulations, company standards, and food safety protocols
Oversee all sanitation procedures and health department readiness
