ASSISTANT KITCHEN MANAGER

Award-winning Petit & Keet is seeking an experienced Assistant Kitchen Manager to join our leadership team.

We are a high-volume, 225-seat, scratch-kitchen restaurant in West Little Rock serving New American cuisine with French and regional influences. Operating seven days a week and producing 1,200+ weekly covers, we emphasize quality, consistency, technique, and execution under the philosophy: “fine dining without the attitude.”

We are looking for a hands-on, organized, and accountable leader with a strong work ethic, the ability to remain calm under pressure, and a passion for hospitality and team development.

Compensation: Based on experience.

ASSISTANT KITCHEN MANAGER JOB DESCRIPTION

Position Summary

The Assistant Kitchen Manager helps oversee daily BOH operations, ensuring consistent food quality, cleanliness, efficiency, labor control, inventory accuracy, and staff development. This role works closely with the executive chef and is actively involved in day-to-day kitchen and service execution.

BOH Operations & Leadership

Assist in managing daily kitchen operations and BOH staff, and working the a station or expo depending on the flow of service.
Works with the executive chef to ensure organization, urgency, and consistency as it relates to prep.
Enforce recipes, portions, plating, and presentation standards.
Maintain cleanliness, sanitation, labeling, storage, and equipment upkeep.
Ensure opening, closing, prep, and cleaning procedures are completed properly.
Reports equipment issues and operational needs promptly.
Maintains staff accountability with professional leadership and communication.
Collaborate with FOH and restaurant leadership to ensure smooth service execution.

Food Quality & Execution

Maintain consistency and quality of all menu items.
Conduct regular checks of prep and finished dishes.
Ensure proper technique, seasoning, temperature, and presentation.
Reduce waste, refires, and overproduction.
Implement menu changes and specials as directed while preserving established standards.

Team Leadership & Development

Helps foster a professional, respectful, and accountable kitchen culture.
Lead by example in attitude, organization, professionalism, and work ethic.
Assists in the facilitation of training, coaching and development of BOH staff across stations.
Maintain morale while enforcing standards and expectations.

Sanitation & Safety

Ensure full compliance with health codes and food-safety standards.
Maintain cleanliness of kitchen, storage, and equipment areas.
Enforce proper food handling, storage, labeling, and temperature control.
Ensure sanitation procedures and cleaning schedules are completed consistently.

Qualifications

Strong knowledge of food cost, inventory, ordering, and labor management.
Proven leadership skills and the ability to hold teams accountable.
Strong understanding of food safety and sanitation.
Ability to perform under pressure in a fast-paced environment.
Excellent communication and organizational skills.
Availability to work nights, weekends, and holidays as required.
Passion for food, hospitality, and team development.

A successful Assistant Kitchen Manager helps operate a clean, organized, efficient, and financially responsible kitchen where food is consistent, prep is accurate, labor is controlled, and issues are addressed proactively.
