Job Classification: Lead Sushi Chef

Department: Sushi Bar

JOB PURPOSE:

Responsible for the organization, procurement and all sushi bar operation including items that requires making sushi and sashimi, cold dish, storing to plating. Should know and not limiting of all sushi bar stations and sushi prep responsibility. Helping to train and to organize newly hires or trainees. In charge of checking all the sushi bar produce both specialty items, high volume products and Nobu sauces. Facilitates all sushi and sashimi, cold dish preparation of the sushi bar requiring various cooking methods, knife skills and organizing/procuring of ingredients for the restaurant. Follow all Hotel and Restaurant Policies and Procedures.

RESPONSIBILITIES:

Primary responsibilities take place during shift when service is being provided to customers.

1. Provides 100% quality service to Nobu’s customers from the moment each arrives until they leave the restaurant.

2. Greets all customers.

3. Takes Sushi Bar orders from customers.

4. Answers all customer inquiries regarding Sushi Bar menu items.

5. Gives suggestions to customers regarding Sushi Bar menu items.

6. Prepares all Sushi Bar menu items for customers, providing a visual display of Nobu’s perfected methods.

7. Maintains exceptional menu knowledge and attention to detail with plate presentation.

8. Gets to know Regular customers and their specific preferences both on and off the menu.

9. Exhibits a positive attitude, works to be a role model for the other Sushi Chefs.

Additional responsibilities prior to and after Service include the procurement and all sushi bar operation including items that requires making sushi and sashimi, cold dish, storing to plating. Should know all sushi bar stations and sushi prep tasks. Helps to train and organize new hires and trainees. In charge of checking all the sushi bar produce, specialty items, high volume products and Nobu sauces. Facilitates all sushi and sashimi, cold dish preparation of the sushi bar requiring various cooking methods, knife skills and organizing/procuring of ingredients for the restaurant.

Other Functions

· Meet with Head Sushi Chef/Executive Chef to review assignments.

· Ensure that assigned staff have reported to work; report any late or absent employees to the Executive Sushi Chef

· As per the Executive Sushi Chef’s instructions: coordinate breaks for assigned staff, prepare and assign production and prep work for Sushi Line Cooks to complete; review priorities, communicate additions or changes to the assignments as they arise throughout the shift, ensure that opening shift completes startup of Kitchen/Sushi bar line and designated prep work.

· Complete opening duties:

Set up workstation with required mise-en-place, tools, equipment and supplies.
Inspect the cleanliness and working condition of all tools, equipment and supplies.
Check production schedule and pars.
Establish priority items for the day.
Inform the Head Sushi Chef of any supplies that need to be requisitioned for the day's tasks.
Transport supplies from the Storeroom and stock in designated areas.
Prepare fish, vegetables, rice and any other specialty ingredients for menu items.
Start prep work on items needed for the menu of the day and direct Sushi Line Cooks on same throughout the shift.
Check P.O.S. printers on the line; ensure they are in working order and there is enough paper available for the shift.

Additional Qualifications:

1. Must be able to read, write legibly, understand, and speak English.

2. Must be proficient in basic mathematical skills.

3. Must be proficient in Microsoft Word and Excel.

4. Ability to work in a high-pressure environment.

5. Ability to train staff in sushi menu preparation, techniques and kitchen equipment.

6. Strong knowledge of Japanese seafood, fish, product, and terminology.

7. Knowledge of weights, measures and recipe yields.

8. Advanced knife skills.

9. Excellent customer service and communication skills.

Pay: $21.00 - $22.00 per hour
