Position Overview
EC Diner is looking for an experienced **Bread Maker **to take ownership of our in-house bread and ice cream production.
The primary responsibility of this position will be to** produce all of EC Diner's fresh bread products from scratch**. We are looking for someone with professional bread-making experience who understands the entire process — from mixing and fermentation to proofing, shaping, baking, cooling, and storage.
In addition to daily bread production, we want this individual to bring their knowledge and experience to EC Diner by helping us develop different bread varieties, improve recipes, and determine which breads work best for our menu.
This position will also be responsible for producing our house-made ice cream products and helping develop new and seasonal flavors.
Because bread and ice cream production will primarily take place while the restaurant is closed, this position will work mainly overnight and into the early morning hours.
Primary Responsibility – Daily Bread Production
This person will be responsible for making EC Diner's bread every day.
This is a hands-on production position. The Bread Maker will manage the bread-making process from beginning to end and ensure the restaurant has the correct quantity of fresh bread ready for service.
Daily responsibilities include:
- Prepare all bread and dough from scratch.
- Measure and scale ingredients accurately.
- Mix and develop dough according to recipe specifications.
- Manage fermentation and proofing times.
- Divide, portion, and shape dough.
- Score and prepare breads for baking.
- Operate commercial mixers, proofing equipment, and ovens.
- Bake all bread products to EC Diner's quality standards.
- Properly cool and store finished bread.
- Prepare bread for the following day's restaurant service.
- Maintain consistent size, weight, appearance, texture, and flavor.
- Monitor daily bread pars and production needs.
- Adjust production based on business volume.
- Maintain enough product for service while minimizing unnecessary waste.
- Communicate shortages, ingredient needs, or production concerns to management.
The Bread Maker will be expected to independently manage their overnight production schedule and ensure all required bread is completed on time.
Bread Varieties & Product Development
While daily production is the main responsibility, we also want someone who can bring their bread-making knowledge and creativity to EC Diner.
The Bread Maker will work with our chefs and management to:
- Introduce different styles and varieties of bread.
- Develop breads specifically for EC Diner's menu.
- Test new bread recipes.
- Recommend different breads for sandwiches, burgers, entrées, appetizers, brunch items, and other menu applications.
- Develop seasonal and specialty breads.
- Improve existing bread recipes.
- Experiment with different flours, ingredients, fermentation methods, and techniques.
- Help determine which breads can realistically be produced consistently in-house.
- Standardize successful recipes for EC Diner.
- Establish appropriate batch sizes and production quantities.
Ice Cream Production
In addition to bread production, this position will be responsible for helping produce EC Diner's house-made ice cream products.
Responsibilities include:
- Prepare ice cream recipes from according to EC Diner standards.
- Produce established ice cream flavors.
- Measure and mix ingredients accurately.
- Operate ice cream production equipment.
- Properly freeze, store, label, date, and rotate ice cream.
- Monitor the texture, flavor, and consistency of each batch.
- Maintain appropriate production levels based on restaurant demand.
- Monitor ice cream inventory and communicate ingredient needs.
- Help develop new and seasonal flavors.
- Test new flavor combinations and recipes.
- Maintain consistency between batches.
- Keep all ice cream production equipment clean and sanitized.
Overnight Production Schedule
This position will work primarily overnight and early morning hours.
The Bread Maker & Ice Cream Production Specialist will need to be comfortable working independently and managing their own production schedule.
The overnight shift may include:
- Preparing and mixing dough.
- Monitoring fermentation.
- Proofing and shaping breads.
- Baking.
- Preparing dough or starters for future production.
- Producing ice cream.
- Preparing ice cream mix-ins and ingredients.
- Cooling and storing finished products.
- Checking inventory and preparing production quantities for the next shift.
- Cleaning and sanitizing the entire production area.
All required bread and ice cream products must be ready for restaurant operations according to established production times.
Reliability is extremely important for this position. The restaurant's daily operations will depend on this person completing production accurately and on time.
Quality & Consistency
The Bread Maker will take ownership of the quality of EC Diner's bread and ice cream products.
They will be responsible for monitoring:
- Flavor
- Texture
- Appearance
- Size
- Weight
- Fermentation
- Proofing
- Bake quality
- Ice cream consistency
- Finished product quality
If a product does not meet EC Diner standards, the Bread Maker should be able to identify what went wrong and make the necessary adjustments.
Recipe Development & Standardization
As new products are developed, this position will help create standardized recipes and production procedures.
Responsibilities include:
- Documenting ingredient quantities and weights.
- Recording mixing times.
- Establishing fermentation and proofing times.
- Establishing dough temperatures when necessary.
- Recording baking temperatures and times.
- Establishing batch sizes.
- Creating production pars.
- Documenting ice cream recipes and mix-in quantities.
- Tracking successful recipe adjustments.
- Helping management calculate realistic production yields.
- Developing procedures that maintain consistency from batch to batch.
Inventory & Waste Management
The Bread Maker & Ice Cream Production Specialist will also help manage the ingredients necessary for production.
Responsibilities include:
- Monitor flour, yeast, dairy products, sugar, eggs, flavorings, and other production ingredients.
- Notify management when ingredients need to be ordered.
- Properly rotate ingredients.
- Monitor expiration dates.
- Maintain organized dry, refrigerated, and frozen storage.
- Track production waste.
- Avoid unnecessary overproduction.
- Maintain appropriate bread and ice cream pars based on restaurant volume.
Food Safety & Sanitation
This position is responsible for maintaining a clean and food-safe production environment throughout every shift.
Responsibilities include:
- Follow all EC Diner food-safety and sanitation procedures.
- Properly label and date all products.
- Follow FIFO procedures.
- Maintain proper refrigeration and freezer temperatures.
- Prevent cross-contamination.
- Follow proper allergen procedures.
- Properly store dairy and other temperature-sensitive ingredients.
- Clean and sanitize mixers, bowls, utensils, equipment, worktables, ovens, ice cream equipment, and production areas.
- Properly store all ingredients after production.
- Keep personal items out of food-production areas.
- Leave the kitchen and production areas clean and organized for the morning team.
Qualifications
The ideal candidate will have:
- Professional bread-making or bakery production experience.
- Strong knowledge of dough preparation and bread production.
- Experience making multiple varieties of bread from scratch.
- Strong understanding of fermentation and proofing.
- Knowledge of different flours, hydration levels, yeast, and bread-making techniques.
- Ability to troubleshoot bread-production problems.
- Ability to develop and test new bread recipes.
- Ability to consistently reproduce products from batch to batch.
- Experience with commercial mixers and ovens.
- Ice cream or frozen dessert production experience is preferred.
- Strong attention to detail.
- Strong time-management and organizational skills.
- Ability to work independently.
- Ability to manage multiple production timelines at once.
- Understanding of food safety and sanitation.
- Creativity and interest in developing new products.
- Reliable attendance.
- Ability and willingness to work primarily overnight and early-morning hours.

This person should be comfortable taking ownership of the bread program and being able to walk into the kitchen each night knowing:

When each dough needs to be started.
How long each product needs to ferment and proof.
When everything needs to go into the oven.
What needs to be ready before the restaurant opens.
We also want someone who will bring ideas to the table. If there is a better bread for one of our sandwiches, a new variety worth testing, or a way to improve an existing recipe, we want this person to speak up and help us develop it.
Our Goal
EC Diner wants to continue expanding the products we make from scratch.
This position will take ownership of producing our bread and ice cream in-house while helping us develop new products that make EC Diner different from the average restaurant.
Pay: $50,000.00 - $60,000.00 per year
