Chelseas Restaurant & Pub – Lebanon, NJ

Chelseas Restaurant & Pub is a well-established, family-owned neighborhood restaurant in Lebanon, NJ, known for our award-winning wings, burgers, and strong local following. We are seeking a line cook to lead our kitchen with a focus on consistency, leadership, and profitability.

We are continuing to evolve our menu toward an elevated English gastropub style—refined comfort food, classic technique, and strong execution. This is a hands-on role for a chef who can run a high-volume kitchen while helping shape and execute that direction.

Key Responsibilities Kitchen Leadership & Operations

Lead the kitchen during service across all stations (line, prep, expo)
Set the tone for urgency, professionalism, and teamwork
Maintain a clean, organized, and efficient kitchen environment

Food Quality & Consistency

Ensure every dish is executed consistently and meets house standards
Oversee prep systems to support smooth, high-volume service
Maintain strong execution on core menu items (wings, burgers, prime rib, entrees)

Cost Control & Profitability

Manage food cost through portioning, prep systems, and waste contro
Identify opportunities to improve margins without sacrificing quality

Menu Execution & Development

Execute the current menu with precision and consistency
Contribute to menu updates and specials
Help refine dishes in line with an elevated English pub direction
(e.g., prime rib with Yorkshire pudding, refined comfort dishes, seasonal features)

Compliance & Safety

Maintain all food safety and sanitation standards (ServSafe preferred)
Ensure proper labeling, storage, and temperature control
Keep the kitchen inspection-ready at all times

What We’re Looking For

3+ years experience as a Sous Chef, Line cook, or prep cook
Proven ability to run a busy, high-volume kitchen
Strong leadership and team development skills
Solid understanding of food cost, inventory, and labor control
Organized, detail-oriented, and calm under pressure
Hands-on leader who works the line and leads by example
Appreciation for elevated comfort food and gastropub-style cooking

Schedule & Expectations

Part position (leading to full if desired)
Nights, weekends, and holidays required
Must be present during peak service periods

Compensation

Competitive salary based on experience
Performance-based incentives tied to food cost and kitchen performance
Staff meals and dining discounts

Pay: $50,434.14 - $75,000.00 per year
