About Us

Zerbo's Bistro is a one-of-a-kind restaurant located inside Zerbo's Market & Bistro in Commerce Township, MI, serving unique, elevated comfort food and craft cocktails in a warm, lively atmosphere. We're known for our house-made smash burgers, one of the largest bourbon selections in Michigan (100+ labels), and live music Thursday through Saturday nights. We're looking for a skilled Sauté Chef to join our kitchen team and help us deliver consistently outstanding food in a fast-paced, high-volume environment.

Position Summary

The Sauté Chef is responsible for preparing and executing sautéed, pan-seared, and finished dishes to Zerbo's Bistro standards during dinner and happy hour service. This role requires speed, precision, and the ability to multitask on the line while maintaining consistent quality, plating, and food safety standards.

Key Responsibilities

Set up, stock, and maintain the sauté station for each shift, ensuring all mise en place is prepped and ready before service
Prepare menu items using sautéing, searing, and pan-finishing techniques according to standardized recipes and plating guides
Communicate clearly and work in sync with expo, grill, and other line positions to ensure tickets fire and complete on time
Monitor food quality, temperature, and presentation, adjusting seasoning and technique as needed
Maintain a clean, organized, and sanitary station in compliance with health department and company standards
Properly label, rotate, and store all food items (FIFO) to minimize waste and maintain freshness
Assist with inventory counts and communicate low-stock or prep needs to the Sous Chef or Executive Chef
Support happy hour and live-music-weekend volume, remaining calm and efficient during high-volume rushes
Follow all recipes, portion sizes, and cooking methods consistently to maintain menu standards
Assist with training new line cooks as needed
Uphold all food safety, sanitation, and workplace safety protocols

Qualifications

1-3+ years of experience working the sauté or hot line station in a restaurant kitchen (bistro, gastropub, or full-service dining preferred)
Strong knife skills and solid understanding of classic and modern sauté techniques
Ability to work efficiently under pressure during high-volume service, including weekend live-music nights
Team-oriented with clear communication skills in a fast-paced kitchen environment
Working knowledge of food safety practices; food handler certification preferred (or willingness to obtain)
Ability to stand for extended periods, lift up to 50 lbs, and work near open flames, hot equipment, and in a fast-paced kitchen environment
Flexible availability, including evenings, weekends, and holidays
Culinary school training a plus, but not required — we value hands-on experience and a strong work ethic

Schedule

Evening and weekend availability required, including Thursday–Saturday dinner/live music service and daily happy hour (3:30–5:30 PM).
