Position Summary

The Kitchen Manager is responsible for leading all back-of-house operations at Breakfast Republic Irvine. This role ensures exceptional food quality, maintains a clean and organized kitchen, develops and coaches the culinary team, and drives financial results through labor and cost controls.

The ideal candidate is a hands-on leader who thrives in a high-volume environment, values consistency, and can create a culture of accountability while maintaining a positive and supportive workplace.

ResponsibilitiesLeadership & Team Development

Lead, coach, and develop all kitchen team members.
Create a positive culture built on teamwork, accountability, and respect.
Hire, onboard, and train new employees according to company standards.
Conduct regular performance conversations and provide ongoing feedback.
Build bench strength by developing future leaders within the kitchen.

Kitchen Operations

Oversee daily kitchen operations to ensure smooth and efficient service.
Maintain consistent food quality, presentation, and recipe adherence.
Ensure all prep, line, and closing procedures are completed accurately.
Lead by example and work alongside the team during peak service periods.
Monitor ticket times and adjust staffing or workflow as needed.

Food Safety & Sanitation

Maintain the highest standards of cleanliness and organization.
Ensure compliance with all health department regulations and company policies.
Enforce proper food handling, storage, labeling, and temperature controls.
Maintain equipment and coordinate repairs when necessary.
Ensure all opening, shift, and closing checklists are completed daily.

Financial & Administrative Responsibilities

Manage labor costs and staffing levels to meet company goals.
Control food cost through proper ordering, inventory, and waste management.
Complete weekly inventory and accurately track food usage.
Review P&L reports and identify opportunities to improve profitability.
Maintain vendor relationships and ensure accurate ordering and receiving procedures.

Qualifications

Minimum 2 years of Kitchen Manager, Sous Chef, or comparable leadership experience in a high-volume restaurant.
Strong understanding of kitchen operations, food safety, and labor management.
Experience managing food and labor costs.
Proven ability to coach, develop, and hold team members accountable.
Excellent organizational and communication skills.
Ability to remain calm and lead effectively in a fast-paced environment.
Flexible schedule with availability to work weekends and holidays as needed.
Current Food Safety Manager Certification or ability to obtain certification.

Physical Requirements

Ability to stand and walk for extended periods.
Ability to lift and carry up to 50 pounds.
Frequent bending, reaching, and working in hot and fast-paced conditions.
Ability to safely operate kitchen equipment and tools.
