Full Job Description

Job Summary:

The Corporate R&D Chef is responsible for developing innovative sushi products, improving existing recipes, and supporting the company’s culinary strategy across Retail, Club and University Channels. This role combines culinary expertise, market trend analysis, and operational scalability to create high quality, innovative, profitable consumer focused products for our Fresh Sushi Program.

Key Responsibilities

Create and test new sushi recipes, rolls, bowls, nigiri, sashimi and grab and go products.

Develop seasonal, regional and trend driven menu items

Evaluate ingredients, flavors, textures and presentation to ensure a superior customer experience

Translate kitchen-tested recipes into operationally scalable products.

Create the recipe formula for all new innovation and receive preliminary costing to ensure this new product meets the food cost guidelines prior to the cutting presentation to the internal executive team.

Conduct product tastings and refine recipes, formulas and costing based on feedback.

Cross Functional Collaboration

Partner with Sales, Marketing, Operations, Procurement and QA Teams

Assist the Sales Team with customer presentations

Participate in Sushi 101 Training when needed

Participate in Trade Shows

Gain a strong understanding of Kiosk Operations to ensure new item development can be executed at store level.

Provide support to the executive management team by meeting the company’s sales and marketing goals through new product innovation

Minimum Requirements:

Education-

· Associates Degree Required.

· Bachelor's Degree Required.

Licenses; Certificates; Special Requirements-

· Completion of ServSafe or similar program that demonstrates competency in food safety and meets the states requirements for a Certified Food Safety Manager (CFPM).

Competencies: Knowledge, Skills & Abilities-

Required

Culinary degree or equivalent professional culinary experience.
5+ years of sushi chef experience, including advanced knife skills and traditional Japanese techniques.
2+ years of experience in product development, menu innovation, or culinary R&D.
Strong knowledge of food safety, and sushi production.
Experience standardizing recipes for multi-unit operations.
Experience taking a product from ideation to launch
Excellent communication and project management skills.

Preferred

Certified Sushi Chef credential.
Experience in retail grocery, QSR, or multi-unit restaurant environments.
Familiarity with food cost analysis
Knowledge of sustainability certifications and responsible seafood programs.
