ISLAND KITCHEN INFLIGHT

Sous Chef — Naples, Florida

Naples-area kitchen serving Southwest Florida's private and corporate aviation market

Island Kitchen InFlight is a large-scale inflight catering company providing catering and concierge services to crew and passengers across Florida. Our flagship kitchen operates in Naples, FL, in close proximity to the airport, running 24/7/365 to service crew and passenger meal orders throughout Southwest Florida. Founded in Nantucket in 2018, Island Kitchen has since expanded to Naples, Miami, and Palm Beach to bring fresh, nutritious dining options to private aviation clients across the state.

Job Purpose

The Sous Chef manages kitchen staff in the absence of the General Manager and oversees the preparation of hot food and related inventory levels in the kitchen, upholding IK Standards at all times. The Sous Chef acts as an on-site problem solver when situations arise that require immediate action, and is granted the authority to make decisions — consistent with company procedures — to protect customer satisfaction, safety, and cost control.

Responsibilities and Associated Duties

Under the direction of the General Manager and Head Chef, the Sous Chef's primary responsibility is to oversee the preparation of hot food and related inventory levels of the kitchen while maintaining IK Standards, including:

Quality-control each order for adherence to Corporate and Government guidelines.
Maintain consistency in food quality standards.
Rotate all products; label and date all food in the kitchen (FIFO).
Perform preventative maintenance on all kitchen equipment.
Train kitchen staff on potential hazards, general safety, and SOPs.
Dress professionally and in accordance with Company uniform guidelines.
Carry company-provided cellphones/radios at all times while on duty outside the office; communicate with local operations and the company call center as needed.
Demonstrate a keen understanding of hospitality principles in all guest- and crew-facing interactions.
Perform all other duties as assigned by the General Manager.

Knowledge, Experience, and Skill Requirements

7-10+ years of experience in a kitchen environment within a catering or fine dining establishment.
Experience in inflight/airline catering strongly preferred.
Current Safe Food Handling Certificate.
Strong knowledge of proper food handling procedures and government food code regulations.
Culinary preparation skills and excellent knife skills are a must.
Demonstrated ability to work well with others in a team-driven, fast-paced environment.
Supervisory experience preferred.
English is required, Spanish is a plus.

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
Ability to apply good judgment to carry out instructions furnished in written, oral, or diagram form.
Regularly required to sit and talk or hear.
Frequently required to use hands to handle, reach, and carry with hands and arms.
Required to stand and walk.
Must be able to lift and/or move up to 40 pounds.

Pay: $25.00 - $27.50 per hour
