Join the team at Osaka Miami, a premier destination for Nikkei cuisine that blends Japanese precision with Peruvian flavors. As a member of the MCK family, we offer a sophisticated, high-volume dining experience where culinary excellence and operational efficiency are at the heart of everything we do.

Job Summary

We are seeking a strategically minded Head Itamae to manage the comprehensive operation of the sushi bar. This role is responsible for optimizing production processes and cost control while maintaining the brand's standards of excellence to ensure maximum profitability and consistency of our Nikkei offering. You will work closely with the Executive Chef and kitchen leadership to delegate daily responsibilities and ensure the sushi bar is set up for success.

Essential Duties & Responsibilities

Lead and evaluate the performance of Senior and Junior Itamae Chefs to ensure skill development and role fulfillment.
Oversee all sushi operations, including prep levels, stock, inventory, and daily service execution.
Define and enforce high-quality standards for fish handling, including receiving, maturation, butchering, and aging techniques.
Manage fish and Asian specialty orders, controlling costs and ensuring all deliveries are accounted for and stored correctly.
Audit cost control systems and manage food and labor costs to optimize the area's profitability.
Design advanced training programs focused on specialized brand cutting and preparation techniques.
Create, cost, and propose seasonal "Gentei" limited menu options and contribute to main menu development.
Manage staff schedules and rotations to ensure efficient coverage while minimizing overtime and waste.
Ensure strict compliance with health department codes, food safety regulations, and sanitation procedures.
Maintain clear communication between BOH and FOH departments to ensure guest satisfaction regarding food quality and timing.
Handle staffing duties, including interviewing, hiring, conducting performance reviews, and filing HR documentation.

Qualifications & Requirements

Education: Technical studies in Gastronomy with specialized training in sushi and Japanese cuisine (traditional or fusion).
Experience: Minimum 1 year of experience as a Head Itamae in Nikkei fusion restaurants and at least 5 years of experience as an Itamae.
Knowledge: Expert mastery of fish varieties, seasonality, and preservation; in-depth knowledge of Nikkei sauces and marinades; and strong grasp of Good Food Handling Practices (GFP).

Skills:

Intermediate to advanced computer skills.
Strong leadership competencies, including the ability to develop talent and promote engagement.
Ability to maintain a composed and urgent demeanor when resolving sushi bar issues.

Languages: Intermediate level English is required.
