Full Job Description

Overview
The Director of Beverage is a key leadership role responsible for building and scaling a best-in-class beverage program for a fast-growing restaurant company. This is a hands-on, entrepreneurial position for a beverage leader who thrives in startup environments—someone who can balance creativity with discipline, vision with execution, and speed with consistency.

The Beverage Director owns the beverage strategy end-to-end: from concept and menu creation to vendor partnerships, training, cost control, and operational rollout. As the company continues to grow, they will help build the systems, standards, and teams needed to scale without losing quality, culture, or profitability.

This is a hybrid role. 3 days in a Home Office working environment with approximately 25% travel, depending on Growth Opportunities through New Restaurants

Responsibilities

Build & Scale the Beverage Program

Develop the company-wide beverage vision across spirits, cocktails, beer, wine, and non-alcoholic offerings.
Create menus that are brand-right, trend-aware, and operationally executable.
Design scalable beverage systems that include a ground up approach including, but not limited to developing materials to drive knowledge transfer, support training initiatives and identify gaps in performance that could impact the overall strategy.

Drive Financial Performance

Own beverage profitability, including pricing, margins, cost of goods, and inventory management through R365.
Build beverage forecasts in partnership with Finance and Operations to ensure all brand are achieving their forecasted LBW Mix.
Identify opportunities to increase beverage mix, attach rates, and overall revenue.

Vendor Partnerships & Sourcing

Establish and manage distributor, supplier, and brand partnerships.
Negotiate pricing, incentives, and financial support appropriate for a growing company.
Ensure product availability and flexibility as the business scales into new markets.

Operational Excellence

Create beverage specs, recipes, prep standards, and execution guides.
Work directly with operators to ensure consistency, speed, and quality behind the bar.
Support New Restaurant Openings with menu development, setup, training, and operational support.

Training & Culture Building

Develop simple, effective beverage training programs for managers and hourly teams.
Coach and mentor bar leaders and operations teams.
Build a culture of hospitality, accountability, and continuous improvement within beverage.

Compliance & Risk Management

Ensure compliance with alcohol laws, licensing, and responsible service standards, including validation of compliance at the individual Restaurant level.
Implement policies and training that protect guests, teams, and the company.
Maintain and manage State Liquor Licensing status across all New Units, ensuring all Restaurants have the necessary licenses to open on time, fully licensed

Cross-Functional Collaboration

Partner closely with Culinary, Marketing, and Operations on menu launches, promotions, and brand storytelling.
Support marketing initiatives with beverage content, events, and partnerships.
Act as a thought partner in shaping the overall guest experience.

Qualifications

7+ years of beverage leadership experience, ideally in multi-unit restaurants or high-growth hospitality brands.
Beverage certifications (Sommelier, Cicerone, Spirits) a plus, but not required
Ability to build beverage programs from the ground up and scale them.
Strong financial acumen with hands-on experience managing margins and inventory.
Deep knowledge of spirits, cocktails, beer, wine, and emerging beverage trends.
Comfortable working in ambiguity and wearing multiple hats.
Strong communicator, collaborator, and people leader.
Willingness to travel and be present in restaurants.

Pay: From $90,000.00 per year
