Full Job Description

The Chef de Cuisine serves as the on-site culinary leader, responsible for overseeing all kitchen operations in a high-volume fine dining setting. This role combines elevated culinary execution with strategic kitchen management. The Chef de Cuisine upholds the restaurant’s culinary standards by leading the team through service, driving menu innovation, and ensuring that every dish meets the highest levels of quality, consistency, and presentation.

This position requires an experienced chef who thrives under pressure, is passionate about food and hospitality, and can lead a large team in a fast-paced, refined environment. The Chef de Cuisine must be equally skilled in operations, leadership, and culinary artistry.

General Responsibilities

Oversee all aspects of kitchen operations including prep, production, service, and closing and opening procedures
Collaboration with the Culinary Director on seasonal menu development, recipe testing, and cost analysis
Maintain consistency in food quality, flavor profiles, and plating for all services
Lead and develop a team of Sous Chefs, Line Cooks, Prep Cooks, and Stewards through daily service and team building
Monitor food and labor costs, inventory, and kitchen budget compliance
Establish and enforce systems for kitchen cleanliness, organization, and sanitation in accordance with health department regulations
Coordinate with FOH leadership to ensure smooth and synchronized service flow
Uphold training and discipline systems to ensure staff accountability, professionalism, and continuous improvement
Conduct regular line checks, staff tastings, and quality control assessments
Source premium products and maintain strong vendor relationships to support culinary standards
Directly manage kitchen execution for special events, VIP services, and high-profile guest experiences

Management Activities

Full operational leadership of the back-of-house team
Active participation in hiring, onboarding, scheduling, and performance management
Development of training materials and staff growth plans
Oversight of food cost, labor cost, and kitchen equipment maintenance
Collaboration with senior leadership on operational strategies, standards, and guest feedback

Discretion / Independent Judgment

The Chef de Cuisine exercises substantial discretion and independent judgment in managing kitchen operations, supervising staff, developing menus, and making decisions that directly affect food quality, guest satisfaction, and financial performance. This role operates with significant autonomy and is accountable for day-to-day culinary leadership.

Job Qualifications

Education:

High school diploma or equivalent required. A culinary degree from an accredited institution strongly preferred

Experience:

Minimum 5–7 years of progressive culinary experience, with at least 2 years in a senior kitchen management role in high-volume fine dining
Demonstrated ability to lead, motivate, and develop high-performing culinary teams
Extensive knowledge of kitchen operations, food safety, and refined plating standards
