Full Job Description

Kitchen Management and Supervision:

Lead the kitchen team in the Executive Chef's absence.
Supervise kitchen staff, including line cooks, prep cooks, and kitchen assistants, assigning tasks based on skills and expertise to ensure efficient kitchen operations.
Provide guidance, on-the-job training, mentoring, and constructive criticism to junior kitchen staff to improve performance and techniques.
Cultivate a collaborative environment and address issues such as correcting mistakes, handling delays, and supervising dish service staff.
Control labor by monitoring staff efficiency and making decisions on sending staff home during slow periods, or ensuring everyone is on task.
Utilize daily BOH position sheets to keep staff on track with tasks.
Assist with callouts or when employees are running behind, including attempting to find replacements and managing overtime.
Document incidents that warrant it and schedule follow-up meetings.

Food Preparation and Quality Assurance:

Oversee food preparation to maintain consistent quality, ensuring staff follow recipes precisely, maintain proper portion sizes, and present dishes according to restaurant guidelines.
Conduct taste tests and perform final checks before serving dishes.
Ensure the use of high-quality ingredients and check their freshness.
Minimize food waste by managing portion control and optimizing preparation time.
Ensure food is made correctly the first time and not overcooked.
Ensure all dirty dishes are scrubbed or soaking, and that dishes are handled efficiently by all staff.

Menu Planning and Development:

Work closely with the Executive Chef to plan and develop menus for seasonal updates, and special events.
Contribute ideas for new dishes or improvements to existing ones, considering product availability, customer preferences, and food trends.
Calculate food costs, determine portion sizes, and work to increase profitability while maintaining high-quality standards.

Inventory Management and Sanitation:

Oversee and organize kitchen stock and ingredients.
Ensure a first-in, first-out (FIFO) food rotation system and verify all food products are properly dated and organized.
Keep cooking stations stocked, especially before and during prime operation hours.
Manage food and product ordering, keeping detailed records, and minimizing waste.
Maintain kitchen inventory to ensure sufficient quantity and quality of ingredients.
Ensure compliance with health and safety standards by enforcing strict cleanliness and sanitation requirements.
Supervise cleaning schedules, maintain organized workstations, and properly store ingredients to prevent contamination.
Train and coach line staff on basic cleaning tactics, including mid-shift line sweeps and station cleaning.
Make recommendations for maintenance, repair, and upkeep of the kitchen and its equipment.

Administrative Duties:

Assist the Executive Chef with monthly inventories, pricing, cost controls, requisitioning, and issuing for food production.
Conduct daily raw cost tracking counts.
Code invoices and send them to accounting.
Prepare reports, arrange employee schedules, and cost menus.
Coordinate with the restaurant management team on supply ordering, budget, and kitchen efficiency and staffing.
Monitor kitchen employees' time cards for compliance with schedules.
Communicate with the Executive Chef on problems and solutions, ensuring alignment with the business plan.

Qualifications:

Strong knowledge of cooking methods, kitchen equipment, and best practices.
Excellent culinary skills for a variety of food groups.
Significant leadership experience and outstanding leadership abilities.
Excellent communication and interpersonal skills.
Effective time management techniques and ability to multitask.
High degree of resiliency under pressure.
Good understanding of MS Office and restaurant software programs.
Knowledge of up-to-date health and safety standards and food safety certification.
Ability to stand or sit for prolonged periods, lift up to 25-50 lbs, and work in various kitchen environments.
A minimum of 2 years' experience in a similar role is required.

Job Type: Full-time

Pay: $17.00 - $18.00 per hour

Expected hours: 40.0 per week
