Campania – Join Our Culinary Leadership Team

Campania is an Italian-inspired restaurant dedicated to serving handcrafted dishes made with quality ingredients, consistency, and genuine hospitality. We are seeking an experienced Bilingual Kitchen Manager who is passionate about Italian cuisine and takes pride in leading a high-performing kitchen team.

Italian cuisine experience is required. We're looking for a leader who understands traditional Italian cooking techniques, fresh ingredients, pasta preparation, sauces, and the importance of consistency in every dish. Whether your experience comes from an upscale Italian restaurant, family-owned trattoria, or a high-volume Italian concept, we want someone who appreciates the standards that make Italian cuisine exceptional.

The Kitchen Manager reports directly to the General Manager and oversees all back-of-house operations, including culinary production, inventory management, food safety, staffing, scheduling, labor control, training, and kitchen execution. This is a hands-on leadership position responsible for ensuring every plate reflects Campania's commitment to quality.

To promote family and quality of life for our team, we close our restaurants every Monday, Easter, Independence Day, Thanksgiving, Christmas Eve, Christmas Day, New Year's Eve, New Year's Day, and Super Bowl Sunday!

Position Overview

As the Kitchen Manager, you will be responsible for:

Leading all daily back-of-house operations.
Supervising, coaching, and developing kitchen staff.
Maintaining food quality, recipe consistency, and presentation standards.
Managing inventory, ordering, receiving, product rotation, and spoilage control.
Controlling labor costs and scheduling to meet business needs.
Hiring, onboarding, and training all BOH team members.
Ensuring compliance with food safety, sanitation, and health department standards.
Working closely with the General Manager to achieve operational and financial goals.

Expected Schedule: ~45 hours per week (overtime as needed)

Key ResponsibilitiesKitchen Operations

Ensure the kitchen is appropriately staffed for each shift.
Maintain a clean, organized, and efficient kitchen environment.
Verify equipment is functioning properly and report maintenance needs promptly.
Monitor prep levels and ensure readiness for each service.

Inventory & Cost Control

Manage weekly ordering and receiving of products.
Maintain accurate inventory counts and product rotation.
Reduce waste through proper storage, labeling, dating, and spoilage control.
Continuously update prep sheets, par levels, and inventory systems.

Leadership & Training

Recruit, interview, hire, and onboard BOH team members.
Train and coach prep cooks, line cooks, and kitchen staff.
Foster accountability while building a positive and collaborative team culture.
Ensure every team member understands recipes, daily specials, and execution standards.

Food Quality & Guest Experience

Maintain consistency in every dish served.
Ensure recipes and plating standards are followed.
Supervise proper expediting and kitchen communication during service.
Support an exceptional guest experience by delivering quality food every time.

Food Safety & Sanitation

Maintain compliance with all company policies and health department regulations.
Ensure proper food labeling, dating, storage, and handling.
Enforce sanitation procedures throughout the kitchen.
Keep walk-ins, freezers, prep stations, and storage areas clean and organized.

What We're Looking For

Previous Kitchen Manager, Sous Chef, or BOH management experience.
Bilingual (English/Spanish preferred).
Strong leadership and coaching skills.
Experience with inventory management, ordering, food cost, and labor control.
Food Safety Manager Certification (or ability to obtain).
Ability to thrive in a fast-paced, high-volume restaurant.
Excellent organizational and communication skills.
A hands-on leader who leads by example.
Experience in Italian Cuisine is required.
Knowledge of traditional Italian cooking techniques, sauces, pasta preparation, and scratch cooking
