HEAD BAKER & KITCHEN MANAGER Full-Time Salaried

ABOUT THE ROLE

The Head Baker and Kitchen Manager is the production leader of our viennoiserie program and a key member of the back of house leadership team. You own the daily output of the pastry station — laminated doughs, French cakes, tarts, and the full range of items in our case — and the team that produces them. You will report directly to the Executive Chef and work in close coordination with the bread and chocolate teams.

This is a hands-on role. You are in the kitchen producing, not just overseeing.

WHAT YOU'LL DO

Daily Production

Lead daily production of all pastry and viennoiserie items: croissants, kouign-amann, pain au chocolat, and other laminated doughs; entremets, tarts, éclairs, mille-feuille, and seasonal French cakes
Oversee production of savory and prepared items that support café service — sandwiches, quiche, crêpe batter and fillings, and other fresh-made daily items; ensure these meet the same standards of quality and consistency as the pastry program
Maintain production pars in coordination with the Executive Chef and front-of-house team; adjust based on daily and seasonal demand
Perform daily quality checks — evaluating texture, lamination, flavor, finish, and presentation before anything reaches the case
Manage organization and cleanliness of the pastry station, dried storage, walk-ins, and dairy fridge
Ensure food safety and sanitation standards are met at all times

Team Leadership

Supervise and coordinate the kitchen team’s (5-8 people) daily activities across all production shifts
Train bakers and pastry cooks on technique, recipe execution, lamination, assembly, finishing, and safety procedures
Supervise prep cooks responsible for savory and café prep items, ensuring they are trained, organized, and meeting daily production targets alongside the pastry team
Participate in interviewing and hiring of pastry and kitchen staff in partnership with the Executive Chef
Build weekly schedules and manage shift coverage; accurately track hours for payroll

Collaboration

Work closely with the Executive Chef on menu development, seasonal offerings, new product rollouts, and recipe documentation
Coordinate with front-of-house on advance orders, custom cakes, and special requests — ensuring production timelines are met without disrupting daily kitchen flow
Support front-of-house staff with product knowledge so they can speak to pastry items confidently with customers

Operational Responsibilities

Manage ordering for pastry station supplies; coordinate deliveries and verify accuracy
Monitor ingredient costs and work within set cost margins; flag variances to the Executive Chef
Maintain mise en place standards and ensure the station is set up and broken down correctly each shift

WHAT WE'RE LOOKING FOR

Required:

Minimum 4 years of professional pastry experience with a clear focus on French technique — laminated doughs, entremets, tarts, and French cakes are non-negotiable; general baking experience is not sufficient
At least 2 years in a role with supervisory or managerial responsibilities
Demonstrated ability to lead a production team, manage schedules, and hold people accountable
Experience in a café or restaurant environment that includes savory prep — sandwiches, egg dishes, quiche, or similar prepared foods; familiarity with the pace and demands of a full-service kitchen
Comfort reading daily and weekly sales reports — connecting decisions like scheduling, ordering, and staffing levels to revenue trends, slow periods, and product mix; able to spot a pattern and bring a recommendation rather than waiting to be asked
Meticulous standards of cleanliness and food safety awareness; NJ Food Handler Certification required or must be obtained within 90 days of hire
Culinary or pastry arts training preferred; equivalent professional experience considered
Valid driver's license and reliable personal transportation required; role includes occasional local errands, vendor pickups, and supply runs

Nice to Have:

Experience with chocolate and confectionery production
Bilingual English/Spanish

ESSENTIAL FUNCTIONS

COMPENSATION & BENEFITS

Annual Salary: $65,000 – $75,000, based on experience
