About Lantern Donuts
Lantern Donuts is a chef-led donut and coffee shop in downtown Coeur d’Alene. We create elevated donuts from scratch using thoughtfully sourced ingredients, without seed oils, artificial dyes, or unnecessary shortcuts.
Our donuts bring together fine-pastry technique, imaginative flavors, and careful presentation. From house-made custards, glazes, and caramels to thoughtfully composed garnishes, every detail is intended to make the finished donut as beautiful as it is delicious.
We’re looking for a Donut Decorator and Pastry Finisher who takes pride in working carefully, enjoys creating with their hands, and wants to learn the details of professional pastry presentation.
A Unique Opportunity to Learn
This is more than a production decorating position. You’ll have the rare opportunity to work closely with and be trained by Lantern’s Executive Chef, Paul Shields.
Chef Paul brings more than 30 years of experience in fine dining and pastry, including 17 years spent developing his craft alongside veteran pastry chefs in the San Francisco Bay Area. His approach combines classical technique, attention to detail, balanced flavor, and artistic presentation.
For someone interested in pastry, culinary arts, or professional food presentation, this is an opportunity to learn directly from a master of his craft while helping create products that are unlike anything found in a typical donut shop.
What You’ll Do
- Glaze, fill, finish, and decorate donuts according to Lantern’s standards
- Pipe creams, custards, glazes, and other pastry components with precision
- Apply garnishes and finishing elements carefully and consistently
- Follow Chef Paul’s examples and specifications for appearance, balance, and portioning
- Help prepare glazes, fillings, toppings, and other house-made components
- Arrange finished donuts for an attractive and consistent presentation
- Inspect each product for quality before it reaches the display or customer
- Keep decorating and preparation areas clean, organized, and well stocked
- Handle ingredients and finished products with care
- Work efficiently while maintaining attention to detail
- Support the pastry team with daily production and shop operations

Relevant experience is helpful, but it isn’t required. We’re willing to train the right person who brings dependability, attention to detail, a steady hand, and a genuine desire to learn.
