Full Job Description

BREWDOG IS ON THE HUNT FOR A WORLD CLASS SOUS CHEF

BrewDog is coming to Las Vegas, and we’re looking for an experienced leader to open and take on one of our most anticipated flagship sites, with the best view of the strip.

At 30,000 square feet over 3 floors, this will be one of our largest venues globally. With epic facilities such as a 10 barrel on site brew kit, roof terrace bar, beer school room, shuffle boards, merch store and a private function room, it’s going to be one hell of a bar.

This much anticipated bar is part of our expansive global growth. A huge part of our success within our bars has been our explosive food sales, fueled by an incredible menu of farm to table junk food and quality, consistent execution of the dishes our customers can’t get enough of.

We are looking for a talented and knowledgeable Sous Chef that can help us launch this unique site and drive it forward.

You must have at least 5 years of experience in a management role in a kitchen in order to help steer and develop the team here. Due to the size of this site and anticipated food sales, our Kitchen Manager will be leading the charge for a large kitchen team as well as several sous chefs in support.

Financial acumen will also be required as part of this role.

Knowledge of craft beer for this role would be desirable, but a willingness to learn if you don’t is essential. We’ve got all the tools (and the beer), you just need to be excited to learn.

We aim to make sure every single experience a customer has at this BrewDog bar is stand-out. You’ll be a natural trainer & love seeing the people around you learn & develop, you’ll be responsible for nurturing the future talent in BrewDog kitchens and take pride in that.

Experience/Skills

5+ Years experience in a high volume restaurant environment (800 Covers+)
Proven experience as a Head/Executive Chef running successful teams
Ability to create and cost a menu
Knowledge of and passion for craft beer and the brewing industry
Cicerone Certification or willing to achieve certification
Purchasing, inventory controls and budgetary controls
Skills and experience in verbal communication and customer focus
