Job Title: Dietary Supervisor – Skilled Nursing Facility

Department: Dietary

Reports to: Dietician

Job Summary:

The Dietary Supervisor is responsible for overseeing the dietary department within a nursing home setting, ensuring that residents receive nutritious, well-balanced, and safe meals that meet their dietary needs and preferences. This role involves supervising kitchen staff, collaborating with healthcare providers to plan specialized diets, ensuring compliance with food safety regulations, and maintaining a high standard of food quality and sanitation. The Dietary Supervisor also plays an integral role in supporting the health and well-being of residents through thoughtful meal planning and food preparation.

Key Responsibilities:

Supervision and Staff Management:
Supervise, train, and manage dietary aides, cooks, and other kitchen staff, ensuring that they adhere to established food safety and sanitation protocols.
Assign tasks and schedules for kitchen staff to ensure smooth and efficient kitchen operations.
Monitor and evaluate the performance of dietary staff, providing feedback, coaching, and conducting performance reviews.
Ensure that all kitchen staff are well-trained in food preparation, hygiene standards, and dietary requirements for residents.
Dietary Planning and Resident Care:
Collaborate with registered dietitians, nutritionists, and healthcare providers to plan and implement meal plans tailored to residents' individual health conditions (e.g., diabetes, hypertension, low-sodium, etc.).
Ensure that meals meet the nutritional needs of residents and comply with any dietary restrictions or preferences.
Review and modify meal plans based on residents' needs, preferences, and any changes in their health status.
Work closely with residents and family members to accommodate food allergies, dislikes, and personal preferences while maintaining nutritional integrity.
Food Safety and Sanitation Compliance:
Ensure compliance with local, state, and federal food safety and sanitation regulations.
Maintain strict control over food storage, temperature checks, and food handling procedures to prevent contamination and spoilage.
Oversee daily kitchen cleanliness and maintenance, ensuring all equipment and surfaces are properly cleaned and sanitized.
Conduct regular inspections of the kitchen, dining areas, and storage facilities to ensure food safety protocols are consistently followed.
Inventory and Budget Management:
Assist in ordering food and supplies, managing inventory, and ensuring that stock is maintained at adequate levels.
Monitor food costs and ensure efficient use of food supplies, aiming to stay within budgetary constraints while maintaining high-quality meals.
Maintain records of food purchases, inventory levels, and usage for cost control and auditing purposes.
Quality Assurance:
Ensure that meals are consistently prepared to the highest standards of quality, flavor, and presentation.
Address any concerns or complaints regarding food quality, taste, or presentation in a professional and timely manner.
Regularly assess and adjust food preparation methods to improve meal offerings and meet residents' needs.
Collaboration and Communication:
Work closely with nursing staff and other departments to ensure that dietary requirements are being met for all residents.
Participate in care plan meetings and collaborate with healthcare professionals to address any changes in residents' dietary needs.
Communicate effectively with staff, residents, and families regarding dietary issues or concerns.
Administrative Duties:
Maintain and update accurate records of resident dietary preferences, allergies, and health conditions.
Prepare reports for management regarding food service operations, including staffing, inventory, food costs, and compliance with regulations.
Participate in the development and implementation of policies and procedures related to dietary services.

Qualifications:

High school diploma or equivalent required; Associate’s or Bachelor's degree in nutrition, food service management, or related field preferred.
Minimum of 2-3 years of experience in a dietary or food services role, with at least 1 year in a supervisory position in a healthcare setting (preferably in a nursing home or long-term care facility).
Knowledge of food safety regulations, sanitation practices, and nutrition for the elderly.
Strong leadership skills and experience in managing and motivating a team.
Excellent organizational and time-management skills.
Ability to work with a diverse team and interact effectively with residents, families, and healthcare professionals.
Certification in food safety (e.g., ServSafe) preferred.
Ability to multitask and thrive in a fast-paced, dynamic environment.
Compassionate, patient, and detail-oriented, with a commitment to ensuring the well-being of nursing home residents.

Physical Requirements:

Ability to lift up to 50 pounds and perform physical tasks associated with food service.
Ability to stand, bend, and move for extended periods.
Ability to work in a kitchen environment, which may involve exposure to heat, steam, and strong smells.

Working Conditions:

Full-time position, with shifts that may include evenings, weekends, and holidays.
Work is primarily performed in a commercial kitchen and dining room setting.
