Job Overview

Honolulu Coffee Company is seeking a dynamic and results-driven Pastry Chef to lead our bakery operations. This role is responsible for overseeing daily production, new product development, financial performance, and staff engagement while maintaining the highest quality standards.

The Pastry Chef will lead quarterly product rollouts, continuously improve existing recipes, and ensure efficient operations in both sweet food programs. This position is hands-on, requiring strong leadership, innovation, and cost-conscious decision-making to optimize production and drive profitability.

This is a full-time, salaried position starting at $70,000 per year, with benefits including

healthcare, 401(k), and paid time off.

Key Responsibilities

Culinary Operations & Production Leadership

● Oversee day-to-day bakery operations, including production schedules, inventory

management, staffing, and maintaining high efficiency and product quality.

● Lead quarterly product rollouts, developing new pastries, baked goods, and savory

menu items while improving existing offerings.

● Ensure all products meet brand quality standards, market trends, and customer

expectations.

● Actively work alongside the bakery team, demonstrating creative baking and savory

techniques while maintaining consistency.

● Implement cost-saving measures to reduce ingredient waste and improve operational

efficiency.

Financial Profitability & Cost Control

● Manage and analyze bakery financial performance, tracking expenses, revenue, and

profit margins.

● Develop strategies to improve cost efficiency and profitability while maintaining high

product standards.

● Conduct recipe costing and budget management, ensuring all menu items are accurately

priced and aligned with financial goals.

● Work closely with vendors to source high-quality ingredients at optimal pricing.

Team Development & Engagement

● Lead, mentor, and train the bakery team, fostering a culture of collaboration, innovation, and excellence.

● Provide ongoing coaching and hands-on training to improve technical skills, efficiency,

and creativity.

● Ensure staff alignment with the company’s culinary and operational goals, creating a

positive and engaging work environment.

Process Improvement & Quality Assurance

● Improve bakery line efficiencies, reducing yield loss while maintaining consistency and

quality.

● Ensure compliance with health, safety, and sanitation regulations across all production

areas.

● Maintain strong communication with cafe locations to ensure seamless integration of

bakery and savory offerings.

Qualifications & Experience

● Minimum 3 years of experience in a bakery, cafe, or food production leadership role.

● Strong expertise in pastry and savory culinary techniques, with a proven ability to

develop and refine recipes.

● Experience managing food costs, inventory, and production efficiencies.

● Strong leadership skills with a hands-on approach to training and development.

● Ability to balance creativity, quality, and cost-effectiveness in menu development.

● Knowledge of food safety and sanitation regulations.

● Weekend availability required, with a rotating schedule.
