Full Job Description

Perenn is a fast paced bakery, restaurant, grocery and cafe dedicated to the craft of preparing and baking quality bread and viennoiserie. We are looking for individuals who are driven and self motivated with willingness to work in a team environment and maintain constant productive communication.

What to Expect as a Prep Kitchen Sous Chef

Lead prep team in performing demos, assigning tasks and responsibilities, and auditing performance
Create and maintain systems to keep product/s from becoming waste
Collaborate with the Regional Chef de Cuisine and line staff to make sure pars are adjusted accordingly each week based on business needs (i.e. restaurants and grocery)
Answer, report and follow Regional Chef de Cuisine’s instructions and standards
Comply with health, safety, food handling, and hygiene standards
Scheduling kitchen staff, assigning roles based on experience and skills
Handle discipline and termination of employees in accordance with restaurant policy
Receive, FIFO, and put away inventory
Ensure appropriate items are being ordered and delivered by vendors and alerting vendor and Regional Chef de Cuisine when items are missing
Maintain a positive and professional approach with coworkers and customers
Prepare high-quality food following prescribed recipes and production specifications
Instruct employees on how to operate a wide range of kitchen equipment (deep fryer, grills, industrial mixer, gas range, rotisol) and perform daily upkeep/troubleshooting.
Monitor that employees are fulfilling opening and closing duties as well as well as participate in said tasks
Update opening and closing duties as need be
Update “Maintenance” channel in Slack as well as Regional Chef de Cuisine when equipment is in need of repair or replacement
Assume additional responsibilities as delegated, contributing to the overall success and operational efficiency of the company

About You

2-3 years of experience in a prior leadership role
Culinary school degree/diploma (preferred)
Proficiency in knife skills (preferred)
Excellent communication skills
Highly skilled in multitasking, with the ability to efficiently manage multiple tasks simultaneously while maintaining composure and attention to detail
Ability to foster collaboration
Self-starter
Adaptable and flexible
Collaborative and willing to assist whenever necessary
Ability to work effectively as part of a team
Hospitality is at the heart of everything

Physical Requirements

Must be able to lift up to 50 pounds regularly
Must be able to stay on feet for prolonged periods of time
