Overview

We are seeking a dynamic and passionate Head Sushi Chef to lead our culinary team in delivering exceptional sushi experiences. As the Head Sushi Chef, you will oversee all aspects of sushi preparation, kitchen management, and team leadership, ensuring the highest standards of food quality, safety, and presentation. Your expertise will inspire innovation and excellence while fostering a collaborative and energetic work atmosphere.

Responsibilities

Lead the sushi kitchen with enthusiasm, setting the tone for quality, creativity, and efficiency.
Supervise daily food preparation, ensuring adherence to recipes, portion control, and presentation standards.
Manage inventory control and food safety sanitizing procedures to maintain a clean, safe, and compliant kitchen environment.
Oversee menu planning and development to keep offerings fresh, innovative, and aligned with customer preferences.
Train, mentor, and supervise culinary staff to enhance skills in food production, handling, and service excellence.
Coordinate with dietary departments to accommodate special dietary needs while maintaining high-quality standards.
Oversee catering events and banquet services involving sushi or related cuisine to ensure seamless execution.
Monitor food costs and implement effective cost control measures without compromising quality or guest satisfaction.
Maintain a lively leadership presence during shifts, managing team schedules and ensuring smooth kitchen operations.
Uphold food safety regulations through rigorous sanitizing procedures and proper food handling practices.

Qualifications

Proven experience in fine dining environments with a focus on sushi or Japanese cuisine.
Demonstrated supervisory experience leading culinary teams in high-volume settings.
Extensive knowledge of food production, food safety sanitizing procedures, and kitchen management best practices.
Strong background in inventory management, cost control, menu planning, and food service management.
Experience with banquet service, catering events, and large-scale food preparation is highly desirable.
Excellent leadership skills with the ability to motivate teams and foster a positive work environment.
Familiarity with dietary department requirements and accommodating special dietary requests.
Ability to manage shift operations efficiently while maintaining high standards of hospitality and service excellence.
