Company Overview

La Glace is a premium French custard ice cream boutique located inside Leonidas Belgian Chocolate Café in the heart of Chicago's Lincoln Park. We are creating a unique dessert experience inspired by the world's finest pastry houses.

We're seeking a passionate macaron chef who takes pride in precision, consistency, and craftsmanship to lead the development and production of exceptional French macarons and our signature macaron ice cream sandwiches.

What You'll Create

You'll be responsible for producing and continuously improving:

French macarons with perfectly developed feet and smooth shells
Premium macaron ice cream sandwiches
Seasonal and signature macaron collections
New flavor combinations inspired by French pâtisserie
Premium desserts featuring Belgian chocolate, pistachio, raspberry, coffee, vanilla, and seasonal fruits

This is a rare opportunity to help build a new artisan dessert brand from the ground up.

Responsibilities

Prepare French meringue and Italian meringue macarons
Produce consistently smooth shells with excellent feet and texture
Pipe, bake, fill, assemble, and finish premium macarons
Develop new macaron flavors and seasonal collections
Produce macaron ice cream sandwiches using premium French custard ice cream
Maintain exceptional quality and consistency
Train additional pastry staff as production grows
Follow food safety and sanitation standards
Manage ingredients and inventory

Qualifications

We'd love to meet you if you have:

Professional pastry experience
Experience making French macarons
Strong understanding of meringues, macaronage, and baking science
High attention to detail
Ability to work independently
Pride in producing beautiful desserts

Preferred

Experience with macarons
Experience with artisan ice cream or gelato
Chocolate and confectionery experience
Culinary or pastry education
