Full Job Description

We're looking for an experienced Head Chef & Kitchen Manager to lead our kitchen and oversee daily operations for a coastal casual concept featuring fresh seafood, quality steaks, and a full sushi bar. This is a hands-on leadership role for someone who can run a high-volume kitchen, manage a diverse team across multiple stations, and maintain consistent, high-quality food across three distinct culinary disciplines.

## Responsibilities

- Oversee all kitchen operations, including the grill/steak station, seafood preparation, and sushi bar
- Develop and refine menus that reflect coastal casual cuisine while maintaining quality and consistency
- Hire, train, schedule, and manage kitchen staff, including sushi chefs, line cooks, and prep staff
- Manage food costs, inventory, ordering, and vendor relationships (with particular attention to seafood freshness and sourcing)
- Ensure compliance with health, safety, and sanitation standards, including raw fish handling protocols
- Maintain quality control across all stations during service
- Collaborate with ownership/management on menu pricing, specials, and seasonal offerings
- Manage labor costs and kitchen budgets
- Train staff on food safety, knife skills, and preparation standards
- Handle scheduling, performance management, and team culture in the kitchen

## Requirements

- Proven experience as a Head Chef, Executive Chef, or Kitchen Manager in a full-service restaurant
- Strong experience with seafood and steak preparation; sushi experience strongly preferred (or proven ability to manage a sushi program/sushi chefs)
- Working knowledge of kitchen management, including inventory, ordering, and cost control
- Food Safety Manager certification (ServSafe or equivalent) required or obtainable
- Experience managing and training kitchen staff across multiple stations
- Ability to work in a fast-paced, high-volume environment
- Strong organizational and leadership skills
- Availability to work nights, weekends, and holidays as needed

## Preferred Qualifications

- Culinary degree or formal training
- Experience opening or running a coastal/seafood-focused concept
- Established relationships with seafood vendors/suppliers
- Sushi experience a plus
