Job Summary

The Head Baker – Oven Department is a hands-on role designed for an experienced baker who brings strong floor presence, technical expertise, and a high level of ownership to each shift. This position supports daily production, reinforces Porto’s standards, and helps develop team members by supporting training, modeling best practices, and setting the pace to ensure consistent execution throughout the oven operation.

What You’ll Do

Serve as a primary point of execution on shift, setting the pace for production and helping ensure smooth workflow, consistency, and adherence to standards throughout the oven operation.
Support and reinforce training for bakers, including Oven Separators, Fryers, and Scratch Bakers/Mixers, by modeling proper techniques, providing guidance on the floor, and helping maintain consistent execution
Oversee production during the shift, ensuring strict adherence to Porto’s recipes and quality standards
Coordinate daily production flow to meet volume, timing, and quality expectations
Monitor proofing, baking times, oven temperatures, and overall product flow
Perform quality checks and make real-time adjustments to maintain product excellence
Promote a safe, clean, organized, and efficient work environment
Ensure compliance with all food safety, sanitation, and workplace safety standards
Communicate clearly with department leadership and respond promptly to direction
Perform other duties as assigned

What We’re Looking For

Minimum 3 years of professional baking experience
Experience supporting, training, coaching, or acting as a go-to resource on shift preferred
Strong technical baking skills and the ability to work independently
Demonstrated ownership, accountability, and reliability
Ability to multitask and remain focused in a high-energy environment
Strong attention to detail and commitment to food quality and safety
Effective communication and collaboration skills
Ability to work in varying temperature environments
Availability to work graveyard/early shifts, weekends, and holidays as business needs require
Must be 18 years of age or older
Food Handler Certification (company provided during onboarding)
