Full Job Description

The Food Service Manager / Chef leads meal-service operations for deployed personnel in OCONUS natural-disaster settings. This role manages food preparation, menu execution, staffing, inventory, sanitation, food safety, and timely meal delivery in high-volume, remote, temporary, or institutional dining environments.

The ideal candidate is a hands-on culinary and operations leader who can maintain safe, reliable food service under demanding field conditions. This individual must be comfortable managing staff, adapting menus and production plans, controlling supplies, and ensuring that all food-service activities meet required safety and sanitation standards.

Key Responsibilities
• Food Service Leadership: Lead daily kitchen and meal-service operations, including staffing, production planning, meal periods, task assignments, and quality standards.
• Meal Preparation: Prepare and oversee high-volume meals that meet approved menus, dietary considerations, portion standards, and operational timing requirements.
• Food Safety & Sanitation: Implement and monitor safe food-handling, temperature-control, storage, cleaning, and sanitation practices.
• Inventory & Purchasing: Manage food, beverage, equipment, and supply inventory; coordinate replenishment and reduce waste or spoilage.
• Team Management: Train, direct, schedule, and supervise cooks, dishwashers, line attendants, and other food-service personnel.
• Operational Coordination: Coordinate with base-camp, logistics, medical, safety, and management teams to address meal schedules, special requirements, and site needs.

Required Qualifications
• Citizenship & Passport: U.S. citizenship and a current, valid U.S. passport are required for this position. Candidates must be able to meet applicable overseas entry, travel, credentialing, and client requirements.
• Food Service Leadership: At least 5 years of food-service, culinary, institutional dining, catering, hospitality, or remote-site operations experience, including supervisory responsibility, is required.
• Food Safety: Current food manager certification, ServSafe Manager certification, or equivalent food-safety credential is required or must be obtained before deployment as required by assignment.
• High-Volume Production: Demonstrated ability to plan, prepare, and oversee meals in high-volume, remote, temporary, or institutional settings.
• Inventory & Staffing: Experience managing food inventory, staffing schedules, sanitation practices, and daily production controls.

Preferred Qualifications
• Remote Food Service: Experience supporting emergency response, base camps, military, maritime, detention, hospital, or remote worksite dining is preferred.
• Culinary Credentials: Culinary degree, chef certification, HACCP training, or specialized dietary-meal experience is preferred.
• Spanish Language Skills: Bilingual Spanish/English communication skills are a plus.
• Deployment Experience: Prior experience supporting disaster response, remote worksites, austere environments, or OCONUS assignments is preferred.

Work Environment
• Citizenship & Passport: Must be a U.S. Citizen and possess a current, valid U.S. passport. Ability to meet applicable entry, travel, credentialing, and client requirements for overseas assignments is required.
• Deployment Flexibility: Must be willing and able to deploy OCONUS or to other assigned disaster-response locations based on operational need. Geographic location and deployment duration may vary by assignment.
• Schedule Readiness: Must be available to work 12-hour shifts, 7 days per week, including nights, weekends, and holidays, for the duration of the assigned deployment as operational needs require.
• Deployment Environment: This is a field-based disaster deployment role that may require work in high heat, humidity, tropical conditions, heavy rain, and rapidly changing operational environments.
• Site Hazards: Personnel may encounter damaged or unsteady buildings, uneven terrain, debris, heavy equipment, limited infrastructure, and potentially dangerous wildlife. Employees must follow all safety protocols, PPE requirements, and site-access controls.
• Physical & Travel Requirements: The role requires the ability to travel independently and safely perform job-related duties in demanding field conditions, with or without reasonable accommodation.
• Variable Deployment: Assignments may be short- or long-term and may require relocation, extended time away from home, and flexibility in work location, schedule, and living conditions.
• Screening Requirements: Employment is contingent upon successful completion of applicable background, identity, work authorization, drug screening, credential verification, and contract-specific requirements.
