About Emmi’s

Emmi’s Lake Geneva is a neighborhood restaurant serving Wisconsin-American classics with supper club hospitality. We’re locally owned, independently operated, and focused on making every guest feel like they’re eating at a friend’s home with better food and a full bar. We’re building something special in Lake Geneva, and we need the right leader to help us do it.

The Role

We’re looking for an Assistant General Manager who lives on the floor, not in the office. You’ll be the GM’s right hand — running service, leading the FOH team, and making sure every guest has an experience worth coming back for. This is a hands-on leadership role. You’ll touch every part of the front-of-house operation: service, bar, host stand, hiring, training, scheduling, and financials.

The right person for this job genuinely loves restaurants, takes pride in building a team, and understands that hospitality is about anticipating what people need before they ask for it.

What You’ll Do: Run the Floor

Lead FOH service during every shift you work — visible, engaged, and setting the standard
Touch every table during service with genuine warmth, not a check-the-box walk-by
Enforce our 10 Steps of Service consistently: 1-minute greeting, allergy inquiry on every table, order repeat-back, 2-minute/2-bite check, dessert offered to every table, warm farewell with review request
Hold the team accountable to timing standards: drinks in 3 minutes, apps in 5, entrees in 15
Handle guest complaints from start to resolution — the goal is a guest who comes back
Ensure every table is guest-ready before seating: clean, stable, set with condiments, silverware rollups, water glasses, water pitcher, and menus

Lead the Team

Hire, train, and develop FOH staff: servers, bartenders, hosts, bussers
Own the onboarding process — every new hire completes our structured 10-day training program and you’re responsible for making sure they’re ready before they work solo
Build the weekly schedule to meet labor targets while keeping the team happy and the floor covered
Coach in real time: recognize great work publicly, address missed standards privately and constructively
Conduct performance reviews, manage corrective action when needed, and create a culture people want to be part of
Lead pre-shift meetings that energize the team: specials, VIPs, Steps of Service focus, and a genuine moment of motivation

Run the Bar

Step behind the bar when needed — you don’t need to be a master mixologist, but you need to be able to cover a call-off, run a busy service, and evaluate your bartenders with credibility
Manage bar inventory, ordering, and pour cost targets
Ensure responsible alcohol service compliance at all times

Know the Kitchen

Expo during service: quality-check every plate, manage timing, coordinate with servers
Read tickets, understand cook times, and communicate delays to the floor before the guest notices
You don’t need to run the line, but you need to speak the kitchen’s language and earn their respect

Own the Numbers

Manage labor cost: schedule to budget, control overtime, adjust staffing in real time based on volume
Understand food and beverage cost and how your floor decisions impact them — comps, waste, pacing
Track daily sales, guest counts, and check averages — know your numbers and act on them
Manage the comp/void process with integrity and proper documentation

Coordinate Events & Private Dining

Manage private event inquiries, planning, and day-of execution
Coordinate with the kitchen on event menus, timing, and special requests
Ensure event guests receive the same standard of service as every other table — or better

What We’re Looking For

2+ years in a restaurant management role (AGM, FOH Manager, or equivalent)
You’ve managed a team of 15+ and can point to people you’ve developed
Bar knowledge: you can step in and run the bar during a busy service
Kitchen literacy: you can expo, read a ticket rail, and communicate with a chef without slowing them down
You understand P&L basics: labor cost, food cost, controllables, and how the floor drives the numbers
Scheduling experience: you’ve built schedules that balance labor targets with team needs
You lead by example, not by title — you’d never ask someone to do something you wouldn’t do yourself
Wisconsin BASSET certification (or willingness to obtain immediately)
ServSafe Manager certification (or willingness to obtain within 30 days)
Availability to work nights, weekends, and holidays — this is a restaurant, and those are the shifts that matter most

What You Get
