Job Overview

We are seeking a passionate and skilled Sushi Chef to join our dynamic culinary team on Bald Head Island on the waterfront in the most dynamic restaurant. Bald Head Island is accessible by a 30 min ferry ride from Southport, ferry and parking are paid for by employer.

In this role, you will craft authentic and innovative sushi dishes, ensuring the highest standards of quality, presentation, and freshness. Your expertise will elevate our dining experience, delighting guests with beautifully prepared sushi and related Japanese cuisine. This position offers an exciting opportunity for culinary professionals who thrive in a fast-paced environment and are dedicated to mastering the art of sushi making.

Responsibilities

Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry
Maintain impeccable cleanliness and organization of the sushi station in accordance with health and safety regulations
Select fresh ingredients, including fish, vegetables, and rice, ensuring optimal quality for all dishes from our sushi vendor, knowledge of fish gutting/cutting, sushi techniques
Educate team members on proper sushi preparation techniques and presentation standards
Develop new sushi recipes and menu items to keep offerings innovative and appealing
Manage inventory levels, order supplies, and minimize waste through efficient stock control
Collaborate with the team to uphold consistency in taste, appearance, and service delivery

Skills

Extensive experience working with seafood and preparing sushi in a professional kitchen setting
Strong knowledge of Japanese culinary techniques and traditional sushi craftsmanship
Ability to develop creative menu items through curriculum development in culinary arts
Proficiency in food safety standards, sanitation practices, and inventory management, Serv Safe preferred
Ability to work efficiently under pressure while maintaining attention to detail in a fast-paced environment
